JEWELED THUMBPRINTS
When I moved here from Malta more than 20 years ago, a kind neighbor lady took me under her wing and baked many cookies for me. This is one of her recipes that I treasure. -Maria Debono, New York, New York

Steps:
- In a large bowl, beat butter and confectioners' sugar until blended. Beat in egg yolk and extract. Gradually beat in flour. Refrigerate, covered, at least 2 hours or until firm., Preheat oven to 350°. Shape into 3/4-in. balls. Place 1 in. apart on greased baking sheets. Press a deep indentation in center of each with your thumb., Bake 12-14 minutes or until edges are light brown. Remove from pans to wire racks. Fill each with 1/4 teaspoon preserves; cool completely. Freeze option: Freeze unfilled cookies, layered between waxed paper, in freezer containers. To use, thaw in covered containers and fill with preserves.

GG'S LACE COOKIES
My grandmother had two cookies she was famous for...this is one of them. they are crunchy, rich, fancy and almost a bit like brittle candy. These are sandwich cookies and great for parties and having with tea.

Steps:
- Place butter, shortening, syrup and sugar in the top of a double boiler and bring to a boil over direct heat. Remove from heat and blend in flour and nuts.
- Drop by teaspoonfuls on a greased, foiled line cookie sheet.
- Bake at 325 degrees for 8-10 minutes. Cool slightly before removing from sheet.
- Place chocolate in new pan and melt over double boiler. When almost melted, remove from heat and stir until melted.
- Brush one cookie with chocolate and cover with another.
- Refrigerate til set.
JEWEL COOKIES
I copied this recipe from a magazine while getting my hair done some years ago, and I'm so glad I did -- they're one of my favorite cookies! My children help me make them on New Year's Day and we polish them off on the same day. (They only make 2 dozen so they're nice for ending a good meal.) Easy to make! I use raspberry jam; any kind would do fine.

Steps:
- Cream butter, brown sugar, egg yolk, and vanilla.
- Stir in flour.
- Refrigerate 30 minutes.
- Preheat oven 375 degrees.
- Roll dough into 1-inch balls and dip in egg white.
- Roll in nuts.
- (Cookie dough ball, not you!).
- With floured thimble or thumb, press center of each cookie.
- Bake 10- 12 minutes, or until delicate golden brown.
- Cool on rack.
- Place 1/2 teaspoon jelly in center.

- 1. Cream butter & sugar together until light & fluffy. Break up egg yolks into creamed mixture. Blend well. Add vanilla. Stir in flour. Chill for 1 hour in the refrigerator. Shape dough into 1 inch balls. Place 1 inch apart on ungreased cookie sheet. Make a small dent in the top of each cookie with finger. Bake in 375 degree oven for 10 minutes. Remove from oven, fill dent with jam. Return to oven for 1-2 minutes to set jam.

- Preheat oven to 350°. In a saucepan, combine brown sugar, butter and milk. Cook and stir over medium heat 3-4 minutes or until slightly thickened. Stir in pecans, flour and vanilla. Drop by 1/2 teaspoonfuls 3 in. apart onto foil-lined baking sheets. Bake 5-7 minutes or until golden brown and lacy. Cool completely before carefully removing from foil., In a microwave, melt chocolate chips; stir until smooth. Spread 1 teaspoon melted chocolate on bottoms of half the cookies; cover with remaining cookies. Refrigerate 10 minutes or until set. Store between pieces of waxed paper in an airtight container.
