A chili that is best when prepared with fresh vegetables, but still delicious with canned or frozen. Serve by itself or over rice.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced
1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans, drained and rinsed
1 ½ cups chicken broth or vegetable broth
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

3 (15 ounce) cans black beans
¼ cup olive oil
2 cups chopped onions
2 medium red bell peppers, coarsely chopped
6 cloves garlic, chopped
2 tablespoons chili powder
2 teaspoons dried oregano
1 ½ teaspoons ground cumin
½ teaspoon ground cayenne pepper
1 (16 ounce) can tomato sauce
salt and ground black pepper to taste

Steps:

  • Drain black beans, reserving 1/2 cup liquid. Set aside.
  • Heat oil in a large, heavy pot over medium-high heat. Add onions, bell peppers, and garlic; saute until onions are soft and translucent, about 10 minutes. Add chili powder, oregano, cumin, and cayenne pepper; cook and stir until fragrant, about 2 minutes.
  • Add reserved black beans, 1/2 cup bean liquid, and tomato sauce. Bring to a boil, stirring occasionally. Reduce heat to medium-low. Simmer, stirring occasionally, until flavors blend and chili thickens, about 15 minutes.
  • Season to taste with salt and pepper. Ladle chili into bowls to serve.

1 (28 ounce) can bush's maple cured bacon baked beans
2 (15 1/2 ounce) cans chili beans
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 1/2 ounce) can tomato soup
3 tablespoons chili powder (adjust to taste)
2 lbs ground beef
1 cup onion
2 (14 1/2 ounce) cans canned carrots
3 garlic cloves
1/4 cup jalapeno (chopped and adjust to taste)

Steps:

  • Brown ground beef with garlic and drain.
  • Combine ground beef and all other ingrediants into stew pot.
  • Cook over medium heat for 30-45 minutes.

I started this recipe a lot of years ago, and have changed and improved it (I hope) a lot of times. My mother recently made a batch with this recipe and entered it in a contest where it won (in Yuma, and I think they KNOW their chili down there!) What makes this great, I believe, is the use of almost all fresh ingredients, keeping canned items to a minimum. Using FRESH vegetables, I believe, is the real key, especially if they are certified organic! Depending on the specific jalapenos, it will be mild to medium spicy.

6 (14 1/2 ounce) cans chili beans (unrinsed, I prefer Bush's)
2 lbs ground chuck
8 garlic cloves (minced or pressed)
4 cups water
1 teaspoon sugar
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons chili powder
1 1/2 teaspoons cumin
3 lbs roma tomatoes (Fresh, not canned!!)
2 green bell peppers
2 red bell peppers
1 bunch green onion
1 large onion (preferably a Walla Walla Sweet onion, if available)
3 jalapeno peppers

Steps:

  • Brown the beef with the garlic.
  • While the beef is browning, in an 8-quart pot add the beans, water, sugar, salt, black pepper, chili powder, and cumin, and set on stove at medium temp, stirring every few minutes to blend.
  • Dice the tomatoes, green and red peppers, green onions, sweet onion, and add to the 8-quart pot, again, stirring frequently.
  • Cut the jalapeno peppers into slices, add to about a cup of water and purée it, add to 8-quart pot, and continue to stir frequently.
  • When the beef is coooked thoroughly and browned completely, add to the 8-quart pot.
  • Bring to just short of a boil, then simmer for at LEAST 2 hours. Makes 8 Quarts.

1 medium white onion (chopped)
1 red bell pepper (diced)
1½ teaspoons sea salt
3 garlic cloves (minced)

3 cups cooked black beans (plus 1 cup of their liquid (amount in 2 cans beans))
1 (14-ounce) can diced fire-roasted tomatoes
1 (4-ounce) can green chiles, no need to drain
1 teaspoon maple syrup
Freshly ground black pepper
1 tablespoon fresh lime juice (plus wedges for serving)
¼ teaspoon cayenne (optional)
Sour cream or Greek yogurt
Avocado
Sliced serranos or jalapeños
Cilantro
Pickled onions
Tortilla chips

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion, bell pepper, and salt and cook, stirring occasionally, until the onion is translucent, 5 to 8 minutes. Add the garlic and chili powder and cook, stirring, for 30 seconds, until fragrant.
  • Add the beans, bean liquid, tomatoes, green chiles, maple syrup, and a few grinds of pepper. Reduce the heat to low and simmer uncovered for 20 minutes, stirring occasionally, until the chili has thickened.
  • Stir in the lime juice and season to taste with more salt, pepper, chili powder, and cayenne, if desired. Serve with lime wedges and desired toppings.

1/4 cup vegetable oil
1 large onion, peeled and chopped
10 medium garlic cloves, smashed, peeled and chopped
2 tablespoons ground cumin
1 eggplant, cut in 1/4-inch dice
1 medium red bell pepper, stemmed, seeded, deribbed and cut in 1/4-inch dice
4 to 4 1/2 jalapeno peppers, stemmed, seeded, deribbed and minced
3 medium zucchini, cut in 1/4-inch dice
2 cups black beans, cooked (see Micro-Tip) or 4 1/2 cups canned black beans, drained and rinsed
1 (28-ounce can) tomatoes, drained and coarsely chopped (liquid reserved)
2 bunches coriander, chopped
1/4 cup fresh lime juice
2 tablespoons kosher salt
Black pepper to taste

Steps:

  • Stir together the oil, onion, garlic and cumin in a 5-quart dish with a tightly fitted lid. Cook, uncovered, at 100 percent power in a 650- to 700-watt oven for 7 minutes.
  • Stir in eggplant. Cook, covered, for 5 minutes.
  • Stir in bell pepper and jalapeno. Cook, covered, for 1 minute.
  • Stir in zucchini, beans, tomatoes, and reserved tomato liquid. Cook, covered, for 14 minutes, stirring once halfway through cooking.
  • Stir in coriander. Cook, covered, for 2 minutes.
  • Remove from oven. Uncover. Stir in lime juice, salt and pepper.

1 Lb. top Sirloin cubed
4 fresh tomatoes, chopped
1 1/2 cups chicken broth
1 medium sweet onion, chopped
3 Anaheim peppers seeded and chopped
1 Poblano pepper seeded and chopped
2 Serrano peppers seeded and chopped
1 Jalapeno pepper seeded and chopped
1 Habanero pepper (do not seed or chop)
4 cloves garlic, minced
4 tablespoons olive oil
1 tablespoon cumin powder
1 tablespoon dried oregano leaves
1 tablespoon smoked paprika
2 teaspoons chili powder
1 teaspoon chipotle or cayenne powder
2 tablespoons pure organic honey
1-2 teaspoons salt to taste

Steps:

  • Place beans, chicken broth and tomatoes in a large sauce pan or dutch oven. Set the Habanero pepper aside. In a separate pan sauté the onion, garlic and peppers in oil on low for 5-10 minutes. Add the spices to the onion and peppers and sauté on low for 5 more minutes, Add more oil if necessary. Stir frequently. Be very careful not to cook the spices on too high a heat; if you do you will burn the spices and ruin the flavor. Mix the onion and pepper mixture into the beans, tomatoes, peppers and broth. Remove the stem from the Habanero pepper and crush it into the pot with a garlic press. Add the honey and salt Cut up the sirloin and sear on high until cooked and add to the pot. Bring to a low boil, reduce heat to low, cover and simmer for 60 minutes. Remove the lid and reduce to desired consistency. Refrigerate overnight for best flavor.
