Steps:

  • Preheat oven to 350-degrees F. Grease an 8-inch baking pan and set aside.
  • In a large bowl, beat together the melted butter and Sugar In The Raw and Stevia In The Raw. Add flour and baking powder and mix well to combine.
  • Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract, cocoa powder and walnuts.
  • Mix well and pour batter into prepared baking pan.
  • Bake for 20 minutes.
  • Cool for 10 minutes in the pan, then cut into 12 squares.

Steps:

  • Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
  • In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  • Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

3 tablespoons canola oil
3 large eggs, room temperature

1 teaspoon vanilla extract

1/2 cup unsweetened cocoa powder
1 teaspoon fine salt
1/2 teaspoon baking powder
One 12-ounce bag semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with aluminum foil and spray with nonstick cooking spray.
  • Stir together the sugar, butter, vanilla and eggs in a medium bowl. Add the flour, cocoa powder, salt and baking powder all at once and stir until just combined. Stir in half of the semisweet chocolate chips and spread the mixture in the prepared pan.
  • Bake until the brownies begin to pull away from the edge of the pan and set in the center, 30 to 35 minutes. 1 -2 teaspoon peppermint or 1 -2 teaspoon orange extract

Steps:

  • Preheat oven to 350 degrees.
  • Put eggs and oil in the blender and mix for 10 seconds.
  • Add remaining ingredients into the blender and process until smooth.
  • Spray 8 x 8 inch pan with cooking spray. Pour batter into pan and bake for about 35 minutes*, or until brownies are just pulling away from edges of the pan.
  • Cool, cut and serve.
  • *Keep an eye on them after 30 minutes as oven temps can vary.

To make my brownies vegan, I used kidney bean aquafaba (bean water) to replace the egg and vegetable oil to replace the butter. I thought there would be an awkward taste because kidney bean aquafaba (bean water) has a umami taste but it went undetected.

1/2 cup kidney bean water

  • Preheat oven to 350°F. Grease an 8x8 square pan.
