Steps:
- Heat the olive oil in a large pot over medium heat. Stir in the red bell pepper, yellow bell pepper, green bell pepper, orange bell pepper, onion, and celery. Cook until tender. Place pork and beef in the pot, and cook until evenly brown. Drain grease.
- Mix serrano chile peppers, diced tomatoes, green chile peppers, tomato paste, kidney beans, garlic, lime juice, tequila, and beer into the pot. Season with chili powder, salt, and pepper. Bring to a boil. Reduce heat to medium-low, and simmer 5 hours.

CHEF JOHN'S CINCINNATI-STYLE CHILI
You'll love this chili if you tend to like foods from the Middle East, the Mediterranean, Greek food, or Indian food, because of the spices and flavor profile. If you don't, you won't. If you finish this dish off with some diced onions and grated Cheddar cheese like I did, you'll be enjoying what they call in Cincinnati a "Four-Way," because of the four components, but feel free to serve as you like.

Steps:
- Combine beef and tomato paste in a large pot. Rinse out the tomato paste can with a couple tablespoons of water and add to the pot with garlic, onion, chili powder, cumin, cinnamon, cayenne, allspice, cloves, black pepper, bay leaf, sugar, and salt. Add apple cider vinegar, Worcestershire, and cold water. Mash and stir with a potato masher or a large whisk to break up the meat into fine pieces.
- Place the pot over medium-high heat; bring to a boil, stirring occasionally with a wooden spoon. Reduce heat to medium-low and cook until flavors come together and chili reaches your desired thickness, 1 to 1 1/2 hours.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until very tender, about 12 minutes. Drain.
- Taste chili and adjust seasoning. Remove and discard bay leaf. Ladle over spaghetti into serving bowls. Top with some onions and Cheddar cheese. Cut and scoop the noodles up with a fork like you're eating a casserole.

JOHNNY JALAPENO'S EASY CHILI CHEESE DIP
Pure heaven. Great for gatherings, game night, movie night, or just anytime. You can also make individual ones using ramekins.

Steps:
- Preheat oven to 350°F and lightly spray a pie pan with cooking spray (Pam).
- Spread cream cheese in bottom of prepared pie pan or an 8x8 pan (or use individual ramekins).
- Top with chili, then the jack cheese. Bake for 15-20 minutes or until cheese is melted.
- Sprinkle top with desired toppings and serve with Doritos or tortilla chips.
JOHNNY JALAPENO'S THIEVING BANDIT CHILI
Many years ago, Johnny had stolen this recipe from 2Bleu. Well, the law finally caught him but to save Johnny from a hangin for stealin, 2Bleu told the judge that while it was indeed their recipe, they had given it to Johnny as a gift and planned on putting his name on the cans. 2Bleu just didn't have the heart to see Johnny hangin from a noose (especially since he was secretly their cousin, twice removed). ;) Adjust the jalapeno, cayenne, and chili powder to your desired heat level. - Over medium heat, brown bacon in a large dutch oven until crisp. Add beef, onions, and garlic. Cook, stirring occasionally, until beef is cooked through.
- Add remaining ingredients and stir. Reduce heat to low and cook uncovered for 2-3 hrs, stirring occasionally, until thickened to your liking.
- Alternatively, you can let simmer for 1 hr, then let cool, refrigerate overnight and finish cooking the next day.

- In a Swiss Diamond stock pot, heat the oil over medium-high heat. Brown the steak in the oil in batches, draining off some of the fat if necessary. Remove from the heat and set aside. In a Swiss Diamond skillet, brown the ground meat over medium-high heat. Drain off the fat and set aside.
- With the oil remaining in the pot, brown half the onions and garlic over medium heat until they are caramelized. Now add the well-drained ground beef and steak. Stir and heat it all up.
- Add the tomatoes, bell peppers, hot peppers (if using), and the remainder of the onions and garlic. Heat to a brisk simmer, stirring often.
