JOJO'S GINGER COOKIES
It's so much fun to decorate cookies with children's help. We created gingery moose-shaped cookies to go with a book made especially for my niece's third-grade class. The crispy golden brown cookies stole the show.-Jenet Cattar, Neptune Beach, Florida

- In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in molasses and water. In another bowl, whisk flour, spices, baking soda and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; placed in covered freezer container, separated with waxed paper. Freeze until firm enough to roll, about 1 hour., Preheat oven to 375°. On a floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 5-in. moose-shaped cookie cutter. Carefully place 1 in. apart on ungreased baking sheets. Bake until set, 7-9 minutes. Cool on pans 5 minutes. Remove to wire racks to cool. If desired, pipe with vanilla frosting and decorate with nonpareils. Freeze option: Transfer wrapped disks to a covered freezer container, separated by waxed paper; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare and bake as directed.

GINGERBREAD COOKIES

Steps:
- In a large bowl, combine the flour, salt, allspice, cinnamon, cloves, ginger and nutmeg, and whisk together. Set aside for a minute.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together the brown sugar and butter until fluffy. Drizzle in the molasses, mixing well and scraping the bowl halfway through if necessary. Add the eggs one at a time, beating well after each addition. Add the maple extract and mix well. Add the flour mixture in 3 batches, beating until just combined after each addition. The dough will be pretty dense and slightly dry to the touch -- that's the way you want it! Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
- When ready to bake, preheat the oven to 350 degrees F. Line two baking sheets with parchment.
- Roll the dough out 1/3 inch thick (rolling between two sheets of plastic wrap will keep the rolling pin from sticking). Cut using any cutters you like, and transfer onto the prepared baking sheets. Bake until the cookies are baked through but still soft, 16 to 18 minutes.
JOHANNA'S GINGERBREAD COOKIES
Steps:
- Sift the flour, cinnamon, ginger, cloves, and baking soda in a bowl.
- In a large mixing bowl, blend the butter and brown sugar until combined. Add the eggs, 1 at a time, and then the molasses. Slowly add the flour mixture. Mix well after each addition of flour. The dough will be stiff.
- Divide dough in half, flatten into 2 thick circles and wrap in plastic wrap.
- Refrigerate for 2 hours or until firm enough to roll out.
- Preheat oven to 350 degrees F.
- Roll out, cut into desired shapes and bake until golden brown.
OMA'S GINGER COOKIES
These little cookies are my grandmother's specialty. Perfect to keep in the freezer for later as well! I used to make these all the time with my grandmother, now I get a huge basket of them for every holiday and birthday! In my grandmother's instructions, it tells you to sift some of the ingredients. It makes for a nicer batter, but I don't own a sifter and it's not particularly necessary, I used a whisk or a fork to turn and fluff the dry ingredients before adding.

- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 cookie sheets.
- Beat 1 cup sugar, butter, molasses, and egg together in a mixing bowl using an electric mixer.
- Sift flour, baking soda, ginger, 1 teaspoon cinnamon, cloves, salt, and nutmeg together in a bowl. Beat into butter mixture until combined.

- Pre-heat oven to 350.
- Beat softened butter and sugar until creamy.
- Beat in molasses.
- Combine the dry ingredients.
- Add the dry mixture to the butter mixture in three parts, alternating with the water.

- Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, baking soda and salt into a small bowl; set aside.
- In a large bowl, cream together the butter, shortening, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and milk. Gradually stir in the sifted ingredients using a wooden spoon. Finally, mix in the chocolate chips and crystallized ginger. Use two spoons to drop cookie dough 2 inches apart onto a cookie sheet.
- Bake on the middle rack of the preheated oven for 12 to 15 minutes. The cookies should be golden brown on the sides and the top should have lost it's shine. Allow to cool on the baking sheet for a few minutes before removing to a wire rack to cool completely.

JUMBO GINGER COOKIES
I got this recipe from an old small town country newspaper many years ago. I first made them for a United Way bake sale. They were so plain looking that they were one of the last things to sell until someone tasted one and bought all 7 dozen. From that time on, I am known for these (like grandma used to make) cookies and the recipe is always requested. They are so delicious you can't stop at just one. As well, they are chewy, they stay chewy and they freeze beautifully and even when thawed they are chewy. You can decorate them with a white icing if you like but I just keep them plain. I have even had two marriage proposals because of these cookies.

Steps:
- Combine the butter, shortening and sugar in a LARGE mixing bowl. Beat with an electric mixer until creamy.
- Add the eggs and continue beating, the add the molasses. Mix well.
- Add the spices and flour a bit at a time, using the low speed on your mixer. As the dough thickens, you'll have to increase this to medium and possibly high speed. Mix the ingredients thoroughly. The dough is quite stiff and it tries to crawl out of the bowl.
- Moisten your hands and roll the dough lightly into one inch balls.
- Place on an ungreased baking sheet about 2-inches apart. Flatten the dough to about 1/4-inch thickness with an egg flipper or your fingers. (Personally, I skip this step as the cookies flatten and spread out themselves so it saves some time).
- Bake at 375° for six to eight minutes. Remove cookies from sheet and cool on a wire rack. Count quickly!
