A simple apple and pastry desert, delicous warm or cold

Steps:

  • Blend flour, baking powder and rub in the margarine, then mix in the sugar and the egg. (this can be done in a food processor, just adding the egg at the end)
  • Take 2/3 of the mixture and press into a 8-9" cake tin. Slice and peel the apples and arrange on top in whatever pattern you like.
  • Roll out the remainder of the pastry and cut into strips about 2-3cm. wide and arrange in a lattice pattern over the apples. You don't have to be too fussy because as it cooks the strips tend to spread into each other.
  • Bake in the oven for 40mins @ 160-170C/Fan
  • Dust with icing sugar and enjoy with creme fraiche

2 ½ cups all-purpose flour
1 teaspoon salt
1 cup butter
1 egg yolk
⅔ cup cold water
1 cup cornflakes cereal
10 apples - peeled, cored and sliced
¾ cup white sugar
2 teaspoons ground cinnamon
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon almond extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a cup, beat egg yolk, stir the cold water into the yolk. Gradually stir the egg mixture into the flour mixture until dough can be packed into a ball. On a clean dry surface, roll out 1/2 of the dough large enough to cover the bottom and sides of a 9x13 inch pan. Lay the dough in the pan.
  • Place the cornflakes over the dough in the pan. Arrange apple slices over the top of the corn flake layer. Sprinkle the sugar and cinnamon over the apples. Roll out the second half of the dough to cover the entire pan. Lay over the filling and pinch the edges of the two crusts together. Beat the egg white until foamy, and brush onto the top crust.
  • Bake for 45 to 50 minutes in the preheated oven, until golden brown. Drizzle with glaze while still warm.
  • To make the glaze: In a small bowl, beat the confectioners' sugar with the milk and almond extract until smooth.

1 cup shortening
1 egg yolk
½ cup milk
10 apples - peeled, cored and thinly sliced
½ cup light brown sugar
¼ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 egg white

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. Stir into flour mixture until all flour is damp. Divide the dough in half. On floured surface, roll half the dough into a rectangle and fit into a 9x13 inch pan.
  • In large bowl, combine apples, brown sugar, white sugar, cinnamon and nutmeg. Put apple mixture in pan. Roll out remaining dough and place over apples. Seal edges and cut slits in top dough. Beat egg white till frothy and brush on crust.
  • Bake in the preheated oven for 50 minutes, or until golden brown.

1 tablespoon plus 1 teaspoon cornstarch
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 cups chopped peeled tart apples
1/4 cup unsweetened apple juice
1 tube (4 ounces) refrigerated crescent rolls
3 ounces cream cheese, softened
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
GLAZE:
1/4 cup confectioners' sugar
2 teaspoons 2% milk

Steps:

  • In a small saucepan, combine the sugar, cornstarch, cinnamon and nutmeg. Add apples and juice; toss to coat. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat., Separate crescent dough into four triangles. On a lightly floured surface, roll two triangles into 5-in. circles. Place each into an 8-oz. ramekin, pressing dough onto the bottom and 1/2 in. up the sides., In a small bowl, beat cream cheese, confectioners' sugar and vanilla. Spread over dough in ramekins. Top with apple mixture. Roll out remaining crescent dough into 4-in. circles; place over filling. 1/2 teaspoon salt
1 cup shortening
1 egg yolk, combined with milk to make 2/3 cup (save egg white)
1 cup corn flakes
6 cut-up apples
1 cup sugar
3 teaspoons flour
1 cup icing sugar
1/2 teaspoon almond flavoring
water

Steps:

  • PASTRY: Sift together flour and salt. With a pastry blender or two knives cut in shortening.
  • Separate egg, putting egg yolk in measuring cup. Add milk to measure 2/3 cup.
  • Slowly mix in to the flour mixture, do not ovemix. Divide pastry in half.
  • Put first half of pastry on a cookie sheet. Sprinkle 1 cup cornflakes over pastry, then spread apple mixture over first layer of pastry, leaving an inch around the edges. Put second layer over top, Press together around the edges.
  • Beat egg white and spread over top of pastry.
  • Cook in moderate oven (350F) until tender, about 15-20 minutes. Cool slightly.
  • ICING: Add enough water to make a paste. Drizzle over top.

A former neighbor of mine & I were trying out recipes from some newly acquired military community cookbooks we had "won" together on Ebay. My neighbor found this recipe in one called "Recipes on Parade:Desserts" and since we both had a copy of the cookbook, we both tried it out - and loved the recipe. You would serve this scooped into a bowl, garnished with a little shredded cheddar and whipped cream, or as my neighbor preferred, some vanilla ice cream. This tastes best warm. This is called a "cake" but is not a typical slicing cake.

1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
3 tablespoons sweet unsalted butter, melted slightly
1 large egg, lightly beaten
1 cup finely chopped apple (peeled, cored)
3/4 cup pecans, chopped
1 teaspoon vanilla extract
cheddar cheese, shredded,to taste
sweetened whipped cream or Cool Whip, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9" square glass baking dish well.
  • Mix together dry ingredients (flour, baking powder, salt, sugar).
  • Stir in slightly melted butter.
  • Add beaten egg,apples,nuts, and vanilla and stir to combine.
  • Bake 30 minutes in prepared pan or until toothpick tests done.
  • Serve warm with a bit of shredded Cheddar cheese sprinkled over the top and a dollop of whipped cream.
  • I know the cheese part sounds strange, but it is the secret ingredient!
