THE JUICIEST MEAT BALLS EVER

Steps:
- Soak the bread crumbs in the milk while you prepare the other ingredients.
- Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
- Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.
HOT AND CHEESY BAKED MEATBALLS

- Preheat the oven to 425 degrees F.
- Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
- Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
- Serve with crusty bread and a dressed salad.

- Chop and fry celery, onion and parsley together in oil.
- Mix together beef, veal, salt, egg, garlic and soaked bread. Add fried onion, celery, parsley mix.
- Roll 2 oz. balls and brown in a hot skillet then bake at 375°F for 1/2 hours.

JUDY'S MEAT BALL RECIPE
My mother in law was named Judy . ( she passed away a few years ago..)and this recipe caught my eye because it reminded me of a meatball recipe that she used to make. It is here for safe keeping-from a vintage recipe website. I would make this as an appetizer or serve this over rice.

Steps:
- Mix first 8 ingredients and shape into balls. The meatballs should be a smidge smaller than a golf ball, just a little bigger than bite size.
- Put in a 3 Quart baking dish, heaped on top of each other (or a crock pot will be just fine too. ) Set aside, do not cook yet.
- In a medium sauce pan, cook one can jellied cranberry sauce and 1 bottle chili sauce. Add brown sugar and lemon juice .
- Cook over low heat until cranberry sauce dissolves.
- Pour over the meat balls
- Bake at 350 for 45 to 60 minutes.
