Steps:
- Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

- Melt butter in large nonstick skillet on medium-high heat. Add onion; cook and stir 2 minutes. Add shrimp, garlic powder, thyme, pepper and sea salt; cook and stir 2 minutes.
- Stir in ale, cream and Creole mustard; cook and stir 2 minutes longer or just until shrimp turn pink. Spoon shrimp and sauce into serving bowls. Serve with French bread slices, if desired.

- Saute green pepper, celery and onion in veg oil until tender. Set aside.
- Combine in large saucepan: frozen okra, chopped tomatoes, tomato sauce, chili powder, worstishire sauce, salt, pepper, cornstarch and cooked veggies. Heat until lightly boiling. Simmer 5-10 minutes.
- Add shrimp 5 minutes before ready to serve. Cook until shrimp is pink and cooked through.
- Serve over hot white rice.

SHRIMP IN MUSTARD SAUCE

- In a large skillet, melt 1 tablespoon butter over medium-high. Add shrimp and garlic; cook, tossing, until shrimp starts to turn pink on the outside but is still translucent on the inside, about 2 minutes (shrimp will finish cooking in step 3). Transfer to a plate; set aside.
- Reduce heat to medium. In same skillet, melt remaining butter. Add shallot; cook until softened, 1 to 2 minutes. Add flour; cook 30 seconds, whisking constantly. Gradually add wine, broth, and mustard, whisking constantly. Simmer until it is as thick as heavy cream, about 5 minutes.
- Using a fine-mesh sieve, strain sauce; discard solids. Return sauce and shrimp to skillet. Bring to a simmer, and cook until shrimp are opaque throughout, about 2 minutes; season with salt and pepper. If desired, serve over rice and garnish with thyme leaves.
DELICIOUS SHRIMP CREOLE
We made this last night and it was delicious. If you like it spicy, add some more heat when cooking the vegetables.

- Heat oil in a Dutch oven or heavy pot over medium heat. Cook and stir onion, celery, bell pepper, and garlic in hot oil until soft, 5 to 7 minutes; add diced tomatoes and green chiles, tomato sauce, sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, and bay leaves. Reduce heat to medium low and continue cooking until vegetables are soft, about 30 minutes.
- Put flour into a large sealable plastic bag. Season flour with salt and pepper. Add shrimp to bag, close bag, and shake to coat shrimp in seasoned flour.
- Stir tomato juice into the mixture in the Dutch oven. Reduce heat to low and cook until the juice reduces slightly, about 5 minutes; add shrimp and cook until shrimp turn pink, about 5 minutes. Remove Dutch oven from heat and let the residual heat finish cooking the shrimp until they are bright pink and the meat is no longer translucent, about 5 minutes more.

JUMBO SHRIMP IN CREOLE MUSTARD CREAM

- Peel and devein shrimp. Set aside.
- In large skillet melt 1/2 cup of butter over med-high heat. Do not brown or burn butter.
- Sauté shrimp a few at a time until pink and curled (1-2 minutes).
- Remove shrimp from pan. Set aside.
- Add chives, green onions, bell pepper and tarragon to pan. Sauté 3 minutes.
- Deglaze pan with sherry and reduce to 1 Tbsp of liquid.
- Sprinkle in flour and blend well into the seasoning mixture.
- Add Creole mustard, whipping cream and shellfish stock.
- Whisk until all ingredients are incorporated and mixture begins to thicken. If sauce is to thick thin with a little stock or water.
- Season to taste with salt & pepper.
- When ready to serve bring sauce to a low boil and whisk in remaining butter a little at a time.
- Add shrimp to hot sauce and continue to cooking until shrimp are heated through.
- Serve on a nest of spinach or red pepper pasta. Top with a generous serving of the sauce, and garnish with chopped chives.
