1 cup all purpose flour
1/3 cup cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1/3 cup hot water
½ cup milk
1/3 cup oil
2 eggs
½ cup buttermilk
1 teaspoon vanilla extract
1/3 cup sugar
1/3 cup water
2 cups of milk
250 mL all purpose cream
1 teaspoon vanilla extract
½ cup powdered sugar
2 egg yolks
3 tablespoons cocoa powder
3 tablespoons cornstarch
½ cup chocolate (chopped)
½ cup hot cream
¾ cup chocolate

Steps:

  • Sift the flour, cocoa powder, baking soda, baking powder sugar and salt into a large bowl. Mix well. Crack two eggs and add the vanilla extract, buttermilk, oil and hot water. Stir gently until well-combined.
  • Transfer the cake batter in a round baking pan lined with parchment paper. Tap 3 to 5 times.
  • Bake the cake in a preheated oven using 160C for 30 minutes or until fully done.
  • Flip the cake in a cooling rack and remove the parchment paper.
  • Shape the cake according to the size of your tin can. Set aside the excess cake.
  • Slice the cake horizontally into two layers. Set aside.
  • Heat some water in a pot and add the sugar.
  • Stir gently until the sugar dissolves. Set aside.
  • In a large bowl, combine the cornstarch, cocoa powder and the all purpose cream. Whisk until well combined. Add the egg yolks and vanilla extract. Mix well.
  • Heat the milk in a pot and add the powdered sugar. When it starts bubbling, turn off the heat.
  • Add the ¼ of the milk into the pudding mixture to thin it out.
  • Pour the chocolate mixture into the hot milk.
  • Heat the mixture using medium heat while stirring continuously until it thickens and large bubbles appear.
  • Transfer the chocolate pudding in a large bowl and cover with cling wrap.
  • Chill the pudding until ready to use.
  • Place the chopped chocolate in a large bowl and pour the hot cream.
  • Let it sit for 5 minutes before stirring. Set aside.
  • Place the chopped chocolate in a microwavable container and melt in a microwave.
  • Stir and set aside.
  • Spread some chocolate ganache at the bottom of the tin can.
  • Add a cake layer. Brush the top of the cake with the sugar syrup and cover with chocolate ganache.
  • Make a layer of the chocolate pudding and spread evenly.
  • Pour some melted chocolate.
  • Top with grated chocolate or cocoa powder.
  • Cover the tin can and refrigerate the dream cake.
  • Serve the chilled dream cake and enjoy!

double layer white chocolate mousse
1/2 layer chocolate cake

Chocolate Buttercream frosting
mini semisweet chocolate chips for the sides

Steps:

  • Put layers together in order, frost outside and press chocolate chips into frosting covering the side completely. Pipe remaining buttercream around the top edge. Alternate presentation: Use chocolate mint buttercream and cover the sides with crushed candy canes.

12 tablespoons unsalted butter, at room temperature, plus more for the pans
2 cups all-purpose flour, plus more for the pans
2/3 cup unsweetened cocoa powder (not dutch-process)
2 ounces semisweet chocolate, chopped
1 cup boiling water
1/2 cup sour cream
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar
3/4 cup packed dark brown sugar
4 large eggs, at room temperature
2 teaspoons pure vanilla extract
6 large egg whites
1 cup granulated sugar
1/4 teaspoon salt
4 sticks unsalted butter, cut into small pieces, at room temperature
2 teaspoons pure vanilla extract
1/2 cup heavy cream
4 ounces semisweet chocolate, finely chopped

Steps:

  • Make the cake: Preheat the oven to 350˚ F. Butter and flour two 9-inch round cake pans and line the bottoms with parchment paper. Put the cocoa powder and chocolate in a medium bowl. Add the boiling water and whisk until the chocolate is melted. Whisk in the sour cream until smooth; let cool to room temperature.
  • Whisk the flour, baking soda and salt in a medium bowl; set aside. Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, 3 to 4 minutes. Add the eggs, one at a time, then the vanilla, beating well after each addition. Reduce the mixer speed to low. Beat in the flour mixture in 3 additions, alternating with the cocoa mixture in 2 additions. Finish mixing gently with a rubber spatula, scraping the bottom and sides of the bowl.
  • Divide the batter evenly between the cake pans. Tap the pans against the counter to eliminate any air bubbles. Bake until the cakes spring back in the center when gently pressed, 35 to 40 minutes. Let the cakes cool in the pans for 10 minutes, then run an offset spatula around the edges and turn out the cakes onto a rack to cool completely. Remove the parchment.
  • Make the frosting: Bring a few inches of water to a simmer in a medium saucepan over medium heat. Whisk the egg whites, granulated sugar and salt in the bowl of a stand mixer. Set the bowl over the saucepan (do not let the bottom of the bowl touch the water); cook, whisking, until the sugar dissolves, the egg whites are frothy and the mixture is warm, 3 to 5 minutes.
  • Transfer the bowl to the stand mixer and beat with the whisk attachment on medium-high speed until stiff glossy peaks form and the mixture cools to room temperature, about 5 minutes. With the mixer running, add the butter a few pieces at a time, waiting for them to incorporate before adding more. (The mixture will become liquidy, then it will get thick and shiny once the butter emulsifies. It may also look curdled as you add the butter. It's OK: Keep adding butter and beating.) Add the vanilla and beat until combined and fluffy, 3 to 5 more minutes.
  • Cut each cake in half horizontally to create 4 layers. Place 1 layer on a cake stand or serving plate. Spread about 2/3 cup frosting on top, then repeat with the remaining cake layers, spreading more frosting in between them. Spread a thin layer of frosting on the top and sides of the cake (this is the crumb coat - it doesn't have to be perfect), then refrigerate until the frosting sets, about 30 minutes. Spread the remaining frosting all over the top and sides of the cake, smoothing it with a bench scraper.
  • Make the ganache: Heat the heavy cream in a saucepan over medium-high heat until steaming, then pour over the chocolate in a small heatproof bowl. Let sit for 5 minutes, then stir until smooth. Set aside until cool but still pourable, 20 to 40 minutes (the time will vary depending on the temperature and bowl). Pour the ganache on top of the cake and spread with a small offset spatula, letting it drip down the sides. Let the ganache set 20 to 30 minutes before slicing.

3/4 cup unsweetened cocoa powder
1/4 cup sugar
1/2 cup boiling water
1 (16 ounce) package angel food cake mix
1 1/4 cups water
1 tablespoon instant coffee powder
1 1/2 cups nonfat milk
1 (1 1/3 ounce) package whipped dessert topping mix
1 (1 1/2 ounce) package sugar-free instant chocolate pudding mix

Steps:

  • Preheat oven to 350.
  • Line a 15"x10" pan with wax paper.
  • Wisk together cocoa, sugar and boiling water.
  • Cool to lukewarm.
  • Prepare cake mix to pkg. directions, using the water and adding the cocoa mixture.
  • Spread batter evenly in the pan.
  • Bake 20 minutes or till top looks dry.
  • Invert onto large rack.
  • Remove pan and wax paper and let cool.
  • In a medium bowl, dissolve coffee in milk.
  • Add whip topping& pudding mixes.
  • Beat on low speed till moistened, then high speed till soft peaks form.
  • Chill 5 minutes.
  • Cut cake crosswise into thirds, cover each with topping, then stack.
  • (I'll probably skip the stacking and just frost& serve) Chill for 2 hours.
