Just a Darn Good Pie image

Name says it all. Good everytime! Reminds me alot of a banana split. Think ahead on this one, since there is extended time in the freezer and refrigerator before everyone can dig in.

Ingredients

2 unbaked 9-inch pie shells
2 (8 ounce) packages cream cheese
1 (14 ounce) can sweetened condensed milk
4 ripe bananas, thinly sliced
1 (20 ounce) can crushed pineapple in juice, drained
2 cups heavy cream, well chilled
1 cup chopped pecans, toasted
6 tablespoons chocolate syrup

Steps:

Pre-bake pie shells. Cool them completely.
Beat cream cheese in a large bowl with electric mixer until smooth.
Mix in condensed milk.
Spread into shells, wrap in plastic wrap, and place into the freezer until firm (2-3 hours).
Arrange bananas over filling. Spread pineapple over bananas.
Beat cream until stiff peaks form. Spread over fruit.
Sprinkle on pecans and drizzle with chocolate syrup.
Chill in refrigerator one hour before serving.

This recipe comes from my church cookbook, and I love to make it. Everyone loves it and it is so easy to make. Can also be made ahead and frozen.

Ingredients

8 ounce(s) cream cheese, room temperature
8 ounce(s) powdered sugar
8 ounce(s) cool whip, thawed
1 - graham cracker pie crust
3 tablespoon(s) butter, melted
1/2 cup(s) coconut, flaked
1/2 cup(s) pecans, in pieces
1 jar(s) caramel ice cream topping

Steps:

Topping.. Melt butter in baking pan and stir coconut and pecans in.Toast in pre-heated oveat 375 for about 10 minutes, stir at 5 min.mark.
Mix cream cheese and sugar with mixer. Fold in Cool Whip and pour into crust. Top with coconut mixture and drizzle with caramel. Keep Refrigerated.

1 (12oz.) - cool whip
1 1/2 cup(s) shredded coconut

- caramel topping

Steps:

Mix together cream cheese and confectioners sugar. Fold in Cool Whip. Pour into 2 graham crust pie shells. Put coconut and pecans in large shallow pan. Pour melted butter over this and toast at 300 degrees. When cool, put on pies. Drizzle caramel topping on pies. Each pie makes 8 servings
