This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

4 cups water
1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Steps:

  • Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
  • Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

Grilled steak and chicken that doesn't dry out on the grill, but stays moist and flavorful. These kabobs are simple to make, and delicious to eat. Skewered meat with peppers, onions, and mushrooms in a honey teriyaki sauce.

½ cup teriyaki sauce
½ cup honey
½ teaspoon garlic powder
½ pinch ground ginger
2 red bell peppers, cut into 2 inch pieces
1 large sweet onion, peeled and cut into wedges
1 ½ cups whole fresh mushrooms
1 pound beef sirloin, cut into 1 inch cubes
1 ½ pounds skinless, boneless chicken breast halves - cut into cubes
skewers

Steps:

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
  • Preheat grill for medium-high heat.
  • Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.
  • Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, or until meat is cooked through and vegetables are tender.

2 garlic cloves, crushed
2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon ground pepper
3/4 lb boneless skinless chicken breast
1 teaspoon olive oil
1 medium zucchini
1 medium yellow squash
4 kabob skewers
salt and pepper

Steps:

  • Preheat broiler.
  • Line baking tray with foil and spray with cooking spray.
  • Place rack about 5-inches from heat.
  • Mix garlic, paprika, cayenne, oregano, thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a small bowl.
  • Cut chicken into 1-inch pieces.
  • Spray chicken with cooking spray and toss them in spice mixture.
  • Divide in half and thread on 2 kabob skewers.
  • Place olive oil in small bowl and season with salt and pepper.
  • Cut zucchini and squash into 2-inch pieces and toss in oil to coat.
  • Divide in half and place on 2 skewers.
  • Remove tray from oven and place skewers on the foil.
  • Return to the oven and broil for 5 minutes.

This is a wonderfully tasty marinade... all your neighbors will be envious of the aromas coming from your grill!

Number Of Ingredients 10

1 cup chunky peanut butter
2 ounces Kahlua
2 cloves garlic, minced
1 tablespoon minced onion
1 cup chicken stock
2 teaspoons cooked crumbled bacon
1/4 teaspoon horseradish, to taste
pepper, to taste
3 lbs beef or 3 lbs lamb, cut into 1 inch strips or cubes
bamboo skewer

Steps:

  • Mix the marinade ingredients together in a blender or food processor until smooth; reserve 1/2 cup of mixture for dipping sauce.
  • Cut the meat into strips or cubes and place in remaining marinade, stirring to cover meat well, and refrigerate for at least an hour.
  • Place bamboo skewers in water for 5 minutes, then skewer the meat on them.
  • Cook kabobs on charcoal grill, basting with marinade, until the meat is tender, about 10 to 15 minutes for cubes, or 5 to 10 minutes for strips.
  • Serve with the extra reserved sauce either hot or cold for dipping; serves 4-6 people.
  • You can place cut vegetables between pieces of meat for grilling, too.
