FOR THE GLAZE:
1 ( 14 oz.) regular Kielbasa, sliced
1 (20 oz.) can pineapple chunks, reserve juice
3 T. Teriyaki sauce
1 T. sweet chili sauce
1 T. honey
1 T. pineapple juice (from can)
fro garnish: plain toothpicks

Steps:

1. Soak your toothpicks in water for 20 minutes before baking. Be sure to use plain ( not colored) toothpicks. I learned from experience that the colored toothpicks will bleed and discolor the food. 2.Preheat oven to 425 F. degrees. Line a baking sheet with parchment paper. 3. Place a piece of pineapple in tip of a slice of kielbasa and place on the parchment lined pan. (I wait to put the toothpicks in until after I glaze. The reason being that if you get glaze on the tops of the toothpicks, it will burn in the oven.) 4. In a small bowl combine glaze ingredients.*** Glaze the kielbasa and pineapple bites. Stick each portion with a plain toothpick. 5. Bake for 15 to 20 minutes until hot. Let cool slightly and serve warm. *** I made extra batch of sauce for dipping.

These pineapple bites are a crispy, sweet treat. Any good preserve can be substituted for the pineapple jam. I used fig.

1 cup melted butter (or as needed), divided
1 (16 ounce) can crushed pineapple, drained
1 (12 ounce) jar pineapple fruit topping (such as Smucker's Pineapple Flavored Topping®)
½ (16 ounce) package phyllo dough, or more as needed
1 cup walnut pieces

Steps:

Preheat the oven to 375 degrees F (190 degrees C). Grease 2 24-cup-mini muffin pans with 1/2 cup melted butter.
Mix crushed pineapple and pineapple topping together in a bowl. Set aside.
Cut phyllo dough into 3-inch squares. Paint each square with remaining 1/2 cup butter using a pastry brush. Stack 4 phyllo dough squares together and gently press into the muffin tins. Drop 1 teaspoon of pineapple mixture into each dough cup. Place 3 to 4 walnut pieces in each. Fold dough together at top.
Bake in the preheated oven until golden brown, about 20 minutes. Let cool 5 minutes; gently loosen each pineapple bite with a small knife. Let cool 10 minutes more before serving.

2 tablespoons olive oil
2 lbs boneless skinless chicken breast halves, cut into small chunks
1 (12 ounce) jar strawberry preserves
1 (8 ounce) jar chili sauce
1 (8 ounce) can pineapple chunks
1 dash salt
1 dash ground black pepper
toothpick

Steps:

Heat the olive oil in a skillet over medium-high heat, and cook the chicken chunks 5 minutes, until browned on all sides. Reduce heat to medium, and pour in the preserves and chili sauce. Cook, stirring occasionally, 10 minutes.
Mix the pineapple chunks into the skillet. Season with salt and pepper. Continue cooking 2 minutes, until heated through. Serve with toothpicks.

1 (18.25 ounce) package white cake mix
1 (3 ounce) package lemon flavored gelatin
2 eggs
¾ cup water
⅓ cup vegetable oil
1 (16 ounce) can prepared vanilla frosting
Multi-colored sprinkles, as needed

Steps:

Preheat oven to 350 degrees F. Line mini-muffin pan with mini-cupcake papers (1-1/2 inch in diameter).
Stir together pineapple with juice, cake mix, gelatin, eggs, water and oil in large bowl. Spoon level tablespoon into each cupcake paper.
Bake 10 to 12 minutes or until toothpick inserted in center comes out clean.
Cool completely on wire racks. Pipe frosting creating a small flower on top of each cake bite, decorate with sprinkles.
