KANSAS CITY STYLE BARBECUE SAUCE RECIPE

Try this authentic Kansas City-style BBQ sauce recipe and you'll never use the bottled stuff again.

2 tablespoons American chili powder
1 teaspoon ground black pepper
2 teaspoons Morton Kosher Salt
2 cups ketchup
1/2 cup yellow ballpark-style mustard
1/2 cup cider vinegar
1/3 cup Worcestershire sauce
1/4 cup lemon juice
1/4 cup steak sauce
1/4 cup dark molasses
1/4 to 3/4 cup honey ((see note below))
1 teaspoon hot sauce
1 cup dark brown sugar
3 tablespoons vegetable oil
1 medium onion
4 medium cloves garlic

Steps:

  • Prep. In a small bowl, mix the American chili powder, black pepper, and salt. In a large bowl, mix the ketchup, mustard, vinegar, Worcestershire, lemon juice, steak sauce, molasses, honey, hot sauce, and brown sugar. Mix them, but you don't have to mix thoroughly.
  • Finely chop the onion and crush or mince the garlic cloves.
  • Cook. Over medium heat, warm the oil in a large saucepan. Add the onions and sauté until limp and translucent, about 5 minutes. Crush the garlic, add it, and cook for another minute. Add the dry spices and stir for about 2 minutes to extract their oil-soluble flavors. Add the wet ingredients. Simmer over medium heat for 15 minutes with the lid off to thicken it a bit.
  • Taste and adjust. Add more of anything that you want a little bit at a time. It may taste a bit vinegary at first, but that will be less obvious when you use it on meat. I recommend you run with my recipe the first time and then you can make it your own. Strain it if you don't want the chunks of onion and garlic. I like leaving them in, they give the sauce a home-made texture.
  • Serve. You can use this sauce immediately as you would any other BBQ sauce, but I think it's better when aged overnight. You can store it into clean bottles in the refrigerator for a month or two.

12 ounces water
8 ounces white vinegar
1 1/2 ounces celery juice
6 ounces your favorite BBQ seasoning blend
6 1/2 ounces sugar
1/4-ounce cornstarch
1 to 2 drops liquid smoke (recommended: Wright Liquid Smoke)
1-ounce salt

Steps:

  • In a saucepan over medium-high heat, mix tomato paste and water together until smooth. Then add the remaining ingredients, in order. Cook over medium heat until sauce reaches 190 degrees F, about 5 to 10 minutes. Enjoy!

CLASSIC KANSAS CITY BARBECUE SAUCE

Both this sauce and the Memphis sauce for barbecued chicken are tomato based. This Kansas City sauce is a little sweeter and, with the addition of butter, a little more round in flavor.

Number Of Ingredients 14

1/2 cup firmly packed dark brown sugar
1 Tbs. onion salt
1-1/2 tsp. celery seeds
1-1/2 tsp. garlic powder
1-1/2 tsp. chili powder
1 tsp. finely ground black pepper
1 tsp. ground cumin
1/2 tsp. cayenne
2 cups tomato ketchup
1/4 cup white vinegar; more to taste
2 Tbs. prepared yellow mustard
1 tsp. fresh lemon juice
1 tsp. liquid smoke (optional)
4 Tbs. butter, cubed and chilled

Steps:

  • In a medium saucepan, combine all the ingredients except the butter. Bring to a boil, stirring to dissolve the sugar. (You may want to have a lid handy to protect yourself and your kitchen from any sputtering.) Reduce the heat and simmer for 25 minutes, stirring occasionally. With a whisk, blend in the butter cubes, a couple at a time, until incorporated.

2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper, allspice, and cloves and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard bay leaf before using.

1/2 small onion, grated

  • In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, 2 to 3 minutes. Add ketchup, brown sugar, vinegar, molasses, Worcestershire, mustard, cayenne, and lemon juice. Bring to a simmer. Cook, stirring occasionally, until thick, about 5 minutes. Carefully transfer mixture to a blender and puree until smooth. Sauce can be cooled completely and refrigerated in an airtight container for up to 2 weeks.

The best have multiple sources of sweetness (brown sugar, molasses, honey, and onion - which gets sweet when it is cooked); multiple sources of tartness (vinegar, lemon juice, hot sauce, and steak sauce); multiple sources of heat (American chili powder, black pepper, mustard, and hot sauce); and it gets layers of flavor from all the above as well as ketchup, Worcestershire, garlic, and salt.

Add the tomato sauce, 1 cup water, the vinegar, ketchup, brown sugar, molasses, Worcestershire sauce, tomato paste, mustard, garlic powder and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 15 minutes. Stir in the liquid smoke. Strain the sauce, pressing on the solids to extract any liquid.

This recipe makes about 4 cups sauce, but it keeps well in the fridge or freezer, and makes a great homemade gift! 2 teaspoons oil (neutral flavored)
1 onion, minced
3 garlic cloves, minced
4 cups vegetable stock (low sodium preferred)
1 cup root beer
1 cup cider vinegar
1 cup dark corn syrup
1/2 cup molasses
1/2 cup tomato paste
1/2 cup ketchup
2 tablespoons brown mustard
1 tablespoon hot sauce (a good sambol would do nicely, as well)
1/2 teaspoon liquid smoke, divided

Steps:

  • In medium dutch oven, heat oil over medium high heat till shimmery (but not smoking). Add onion and garlic and cook till soft, about 5 minutes.
  • Add stock, root beer, vinegar, corn syrup, molasses, tomato paste, ketchup, mustard, hot sauce, and 1/4 teaspoons liquid smoke. Stir with a whisk till well combined.
  • Bring to a boil, then reduce heat to medium and simmer till mixture has thickened and reduced to about 4 cups, about an hour. Remove from heat and stir in remaining liquid smoke.
  • Sauce will keep about a week in the refrigerator, or up to four months if frozen.
