Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Place the cooked pasta into a large mixing bowl, and add the cream of mushroom soup, ketchup, green chiles, onion, and luncheon meat. Pour into a 9x13 inch baking dish, and evenly sprinkle with the Cheddar cheese.
- Bake in the preheated oven until the casserole is hot and the Cheddar cheese has melted, about 10 minutes.

EXTRAORDINARY SPAM CASSEROLE
My Extraordinary Spam Casserole has chicken broth combined with a white sauce delicately seasoned with Parmesan cheese and ground curry powder along with crushed pretzels, onion, fresh mushrooms, potatoes, penne pasta, and just half a can of spam canned meat for a hearty meal.

Steps:
- Brown your chopped onion in the olive oil until golden brown before adding your sliced mushrooms to fry as well.
- While they are frying, I like to roll out my pretzels. Grab a sheet of wax paper long enough to fold over your pretzels that are about to be crushed. Use your rolling pin and crush until broken up fine.
- Cook your penne pasta or noodles al dente.
- Cook your cubed potatoes in water like usual until almost done.
- Afterwards, I assemble all the ingredients in a large mixing bowl first before pouring into my waiting large, greased casserole dish. I found it easier to mix this way than trying to struggle stirring in the casserole dish.
- Send the filled casserole and covered dish to a 350-degree oven for about 40-minutes. Check after 30 minutes to see if you need to add any more broth. If so, just add enough to moisten and then return to your oven to finish baking.
- ENJOY!

SPAM FANTASY CASSEROLE!
...heh... heh... heh..... Hey! Some folks really like Spam! I like Treet even a little better because it's sweeter. The recipe comes off the back of the del Pino's shell macaroni box. If you don't like canned Spam or Treet, then I would look elsewhere for a casserole more to your liking but, if Spam is your thing, this is easy and tasty! You could melt some extra cheese on top if you wished to do so. This is probably a great college student recipe. By the way, THEY didn't call it "Spam Fantasy" -- they called it "Shell Bake", which I thought sounded pretty unexciting. I was just being artistic. pat.

"KEEP AUSTIN WEIRD" SPAM CASSEROLE
Spam is alive and well here in Austin, Texas. (And oddly enough we do mean Austin, Texas, and not Austin, Minnesota, which happens to be the home of the Hormel product!) Since 1976, local Austinites have been celebrating this forgotten potted pork at the annual Spamarama Festival. The festival offers attendees a variety of options, such as the Spamalypics, the Spam Jam for local musicians, and our favorite competition, the Spam Cook-off ! Here is a casserole dedicated to the beauty of Spam. We love you!
