- Make zucchini noodles using a spiralizer or julienne peeler.
- Melt the butter in another skillet over medium heat. Add garlic and cook about one minute, until soft and fragrant.
- Reduce heat to medium-low. Stir in the almond milk, heavy cream, and nutmeg. Bring to a gentle simmer.
- In a small bowl, whisk the arrowroot powder with just enough water to dissolve it (1-2 tablespoons (15-30 mL)), until smooth with no lumps. Whisk the mixture into the sauce on the stove. Whisk in the parmesan cheese. Add black pepper to taste. Continue to heat, stirring constantly, until the cheese is melted and the sauce starts to thicken. Remove the sauce from the pan, cover, and set aside.
- Pat the zucchini noodles dry with paper towels. Add the zucchini noodles to the pan and turn up the heat to medium-high. Stir fry until barely softened but still crunchy, about 2-4 minutes. Stir in the sauce. Garnish with fresh parsley and additional parmesan cheese if desired.

Steps:
- Cut the ends off of the zucchini, and dispose of them.
- Then place (this will depend on the spiral cutter you have) the zucchini on the spiral, and prepare as your machine tells you to.
- Then place the noodles onto a dish towel and blot out as much water as you can get out, you will notice it's more than one would think.
- Leave for about 40 minutes, until most of the water has been removed.
- Then in a small bowl, add the noodles, 2 tablespoons of olive oil, and salt and pepper to taste.
- Spread in your air fryer basket or tray.
- Set the timer for 7 minutes at 350 degrees F, (air fryer setting) this will get them nice and tender. If you want them crispy add a few minutes to the time.
- Plate, serve and enjoy!

- Spray the air fryer basket with a non-stick cooking spray.
- Put frozen zucchini noodles in the air fryer basket. Cook in the air fryer at 400F for 8 minutes.
- Remove the basket from the air fryer. Take out the inner basket, then drain water from the outer basket. Put the inner basket back into the outer basket. Stir the zucchini noodles to spread them in a single layer.
- Return then air fryer basket to the air fryer. Cook zucchini noodles at 400F for an additional 5 minutes.
