KETO Creamy Lemony Cucumber Salad image

Number Of Ingredients 9

2 large or 4 small cucumbers
1/4 Red Onion, sliced
2 tbs Yoghurt or Coconut Yoghurt
2 tbs Lemon Juice
1-2 Cloves of Garlic
1 tbs Dried Mint or 1/4 cup fresh mint, minced
Or
1 tbs Dried Dill
2 tbs Olive Oil or MCT oil

Steps:

  • Peel cucumbers, cut the whole cucumber into 2 or 4 lengthwise and then slice them
  • Add thinly sliced onions
  • Add in yoghurt, lemon juice, garlic, mint and olive oil. Mix well
  • Garnish with fresh mint leaves
