KETO SALISBURY STEAK RECIPE WITH LEMON BRUSSELS SPROUTS



Keto Salisbury Steak Recipe with Lemon Brussels Sprouts image

We love lemon Brussels sprouts with our Salisbury Steak as the zingy flavor cuts through the richness.

Number Of Ingredients 13

1.25 lbs (563 g) of ground beef
1/2 teaspoon (1 g) of dried mixed herbs
1/2 teaspoon (2 g) of garlic powder
salt and freshly ground black pepper
2 Tablespoons (30 ml) of olive oil
1 onion (110 g), peeled and finely sliced
12 white button mushrooms (120 g), sliced
1 cup (240 ml) of beef broth, warm
chopped parsley, to garnish
16oz (450 g) of Brussels sprouts, trimmed and halved
2 Tablespoons (30 ml) of olive oil
salt
zest of 1 lemon, finely grated

Steps:

  • In a bowl, combine the ground beef with the dried herbs and garlic powder. Season the mixture with salt and pepper, then mix well. Divide the mixture into 6 equal parts, then use clean hands to form them into patties. Set aside.
  • Heat the olive oil in a large non-stick pan and fry the patties until caramelized on the outside. This is best done in two batches to avoid over-crowding the pan. Remove the patties and set aside, leaving the oil and rendered fat in the pan.
  • Add the onions to the pan and cook, stirring regularly until softened. Add the mushrooms and fry until caramelized. Pour in the beef broth and place the patties back into the pan, nestling them in between the onion-mushroom mixture.
  • Cook until the broth reduces by quite a bit, approximately 10-12 minutes. This will ensure the center of the patties cook through too. Serve garnished with chopped parsley.
  • Preheat the oven to 390°F (200°C).
  • Place the sprouts in a bowl and drizzle over the olive oil. Season with salt and toss to evenly coat.
  • Spread the sprouts out on a roasting tray and cook in the oven for 15 minutes, rotating and shaking the tray halfway through. Serve immediately with plenty of finely grated lemon zest over top.

2 lbs ground chuck (ground beef)
1/4 cup Parmesan cheese
1/4 cup pork rinds (ground)
1 egg
2 TB heavy cream
1/4 cup chopped onion
1 TB Worcestershire sauce
Seasoning to taste (garlic salt and pepper)
SAUTÉ AND ADD IN:
1/2 lb. fresh mushrooms
1/4 chopped onion
2 cups beef broth
3 TB Worcestershire sauce
Garlic powder
2 tsp. Tomato paste
1 cup water
4 TB heavy cream
1 tsp. Xanthum gum

Steps:

  • Add the patties ingredients together to form 6 large patties. Brown in a large skillet....transfer to a 9×13 baking dish.
  • In the same skillet, using your drippings, sauté the mushrooms and onions until browned. Then sprinkle mushrooms and onion over patties.
  • In a saucepan combine gravy ingredients and bring to a simmer until bubbling and well combined. Pour over meat. Bake at 300° for 1 hour.
  • Remove from oven, take out patties and strain gravy to a separate saucepan.
  • Bring to a simmer....add in heavy cream.
  • Sprinkle in xanthum gum evenly over gravy whisking constantly until gravy thickens. Once your gravy thickens.
  • Pour over Salisbury steak.
  • Serve over faux mashed potatoes.

  • In a large bowl, mix together the ground chuck, eggs, dry seasonings, Worcestershire sauce and onion. Divide the meat mixture into 8 equal portions, shaping each into a patty.
  • Heat a large skillet over medium-high heat with olive oil, add the salisbury steaks, cooking in two batches if needed. Patties will shrink.

  • Make the steaks: Add all ingredients for the steaks to a large bowl and mix well (I use a hand mixer with the dough hook attachment). Shape 5 equal patties and set them on a plate.
  • Brown the steaks: Melt 1 tablespoon of butter in a large frying pan over medium-high heat. Brown steaks on either side, about 3 minutes each (don’t worry about cooking them through just yet). Remove and set aside, cover. Do NOT wipe the pan!
  • Make gravy: Place the pan back over medium-high heat. Add another tablespoon of butter. Add the mushrooms and 1 tablespoon of water and cook until softened, scraping browned bits off the bottom of the pan. Pour beef stock and Worcestershire sauce into the pan. Add onion powder and stir well. Bring to a simmer.
  • Thicken and cook: Stir the Glucomannan into a small amount of cold water, then pour it into the gravy and immediately stir well to thicken. Add the steaks back into the gravy and simmer for 10 minutes or until cooked all the way through. Baste with gravy from time to time as they cook.
