Keto Hash with Kielbasa image

This Keto Hash with Kielbasa is an awesome and quick dinner that's as healthy as it is flavorful!

2 tablespoons olive oil
2 medium turnips (diced)
1 large bunch kale (chopped)
1 onion (thinly sliced)
1 bell pepper (thinly sliced)
4 links kielbasa sausages (plant-based if desired (see post for details))
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper

Steps:

  • Heat the oil in a 10" or larger cast-iron skillet over medium-high heat. Fry the sliced sausage for 2-3 minutes per side until golden, remove and set aside.
  • Add the diced turnips and spices to the skillet. Cook 5-8 minutes until tender and starting to brown.
  • Add in the onions and peppers and cook for 2-3 minutes until beginning to soften.
  • Add the sausage back to the pan and cook for 3-4 minutes. Add in the chopped kale and allow it to cook down, stirring for 2-3 minutes. Serve immediately.

2 cups o'brien frozen potatoes
1 medium onion, chopped
1/2 lb kielbasa, cut in 1/2 inch pieces
salt & fresh ground pepper
1/4 cup grated sharp cheddar cheese

Steps:

  • In 10-inch skillet melt butter until sizzling add potatoes and onion.
  • Cook over medium-high heat, stirring occasionally, until potatoes are lightly browned (5 to 6 minutes).
  • Add sausage and continue cooking, stirring occasionally, until sausage is heated through (6 to 8 minutes).
  • Stir in cheese and serve.
