1/4 cup Hemp seeds ((hulled hemp seeds))
1 tbsp Golden flax seed meal
1 tbsp Vital Proteins Collagen Peptides
1/2 tbsp Chia seeds
1/2 cup Coconut milk ((from a can; 1/2 liquid and 1/2 thick cream; or just heavy cream if not dairy-free))
1 tbsp Besti Erythritol ((to taste))
1 pinch Sea salt ((to taste))
1/2 tsp Maple extract
2 tbsp Pecans ((chopped))
1 tbsp Peanut butter
1 tbsp Coconut milk ((or almond milk))
1 tbsp Sugar-free dark chocolate chips
2 tbsp Strawberries ((finely chopped))
1/2 tsp Vanilla extract
2 tbsp Coconut cream ((or just the cream part from canned coconut milk, or heavy cream if not dairy-free))
3/4 tsp Cinnamon
3/4 tsp Vanilla extract ((divided into 1/2 tsp and 1/4 tsp))
1 tbsp Besti Powdered Erythritol
1/2 tbsp Coconut cream ((or just the cream part from canned coconut milk, or heavy cream if not dairy-free))

Steps:

  • Stir all ingredients, except cream or milk, together in a small saucepan. (This includes the optional sweetener and salt if using.)
  • Add cream/milk and whisk until smooth.
  • Stovetop instructions:Simmer for a few minutes, until thickened.Microwave instructions:Instead of a saucepan, use a microwave safe bowl. Heat for 1 to 2 minutes, until thickened.Serve immediately, or follow options below for add-ins.
  • Stir in the maple extract and chopped pecans.
  • Stir in peanut butter and extra milk, then simmer for another minute.
  • Stir in chocolate chips.
  • Stir in strawberries, coconut cream, and vanilla extract.
  • Stir in cinnamon and 1/2 tsp (2.5 mL) vanilla extract.
  • In a very small bowl, whisk together powdered sweetener, coconut cream, and 1/4 tsp (1.25 mL) vanilla extract. Drizzle over oatmeal in a swirl pattern.

A simple warming coconut flour porridge for quiet mornings. This low carb breakfast cereal comes together in minutes providing a fast ketogenic, grain-free breakfast option.

2 tablespoons coconut flour
2 tablespoons golden flax meal
3/4 cup water
pinch of salt
1 large egg (beaten)
2 teaspoons butter (or ghee)
1 tablespoon heavy cream (or coconut milk)
1 tablespoon Low carb brown sugar (or your favorite sweetener)

Steps:

  • Measure the first four ingredients into a small pot over medium heat and stir. When it begins to simmer, turn it down to medium-low and whisk until it begins to thicken.
  • Remove the coconut flour porridge from heat and add the beaten egg, a half at a time, while whisking continuously. Place back on the heat and continue to whisk until the porridge thickens.
  • Remove from the heat and continue to whisk for about 30 seconds before adding the butter, cream and sweetener.
  • Garnish with your favorite toppings. (4 grams net carbs)

3-Minute Keto Creamy Hot Cereal image

A warm and comforting 3-minute keto creamy hot cereal that grain free, gluten free and paleo.

4 tbsp raw sunflower seeds (unsalted and without shells, grind into a powder in processor or blender)
5 tbsp almond flour
2 tbsp golden flaxseed meal, or can use hemp seed meal
2 tbsp butter or ghee
1 cup unsweetened almond milk
½ tsp vanilla extract
¼ tsp ground cinnamon
2 individual packets stevia sweetener (or 1 tbsp pure maple syrup for paleo option)
⅓ cup berries (blueberries & sliced strawberries)

Steps:

  • In a small food processor or blender add the raw sunflower seeds and pulse until a flour or meal texture forms.
  • In a mixing bowl combine: sunflower meal, almond flour, and flaxseed meal. Stir until combined.
  • In a small saucepan over medium heat add butter and melt. Once melted add unsweetened almond milk and vanilla extract and stir. Add sunflower almond-flax mixture and stir and heat for 1 to 2 minutes until warm. Can add a little water to thin or a little more flax meal to thicken if desired.
  • Spoon into serving bowls. Sprinkle each with ⅛ tsp of the cinnamon, 1 packet low carb sweetener and top with berries. Serve.
