If you've never heard of King Ranch Casserole before, you're in for a big treat! This Keto King Ranch Casserole is the perfect introduction to this deliciously cheesy, flavorful casserole dish.

2 tbsp butter
1/4 medium onion (chopped (about 1/2 cup))
2 tbsp almond flour
1/2 cup chicken broth
4 oz sour cream
1/2 cup sugar-free or low-sugar salsa
8 oz chopped, cooked chicken ((about 2 cups))
8 oz shredded Cheddar cheese (divided)
2 Siete Almond Flour Tortillas (cut into 1/4- x 1/2-inch pieces)
Non-stick cooking spray

Steps:

  • Preheat oven to 350 F.
  • Melt butter in a large skillet over medium-high heat. Add onion and cook for 3-4 minutes, or until onions are translucent.
  • Stir almond flour into onion mixture and cook for an additional 1-2 minutes, or until onions thicken slightly. Stir in chicken broth and combine well. Cook an additional 3-4 minutes or until sauce thickens.
  • Stir sour cream and salsa into sauce to combine. Remove skillet from heat and stir in chicken, 6 oz shredded cheddar cheese, and tortilla pieces.
  • Transfer mixture to 8- x 8-inch dish coated with cooking spray. Sprinkle top of mixture with remaining 2 oz shredded Cheddar cheese.
  • Cover and bake at 350 F for 20 minutes. Uncover and bake an additional 15 minutes. Let cool 10 minutes before serving.

1 tablespoon vegetable oil
1 white onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 cup chicken broth
2 tablespoons sour cream
2 teaspoons ground cumin
1 teaspoon ancho chile powder
½ teaspoon dried oregano
¼ teaspoon chipotle chile powder
1 cooked chicken, torn into shreds or cut into chunks
8 ounces shredded Cheddar cheese
10 corn tortillas, cut into quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over high heat. Saute onion, red bell pepper, and green bell pepper in hot oil until warmed through, about 2 minutes.
  • Combine onion-pepper mixture, cream of mushroom soup, cream of chicken soup, diced tomatoes, chicken broth, sour cream, cumin, ancho chile powder, oregano, and chipotle chile powder together in a large bowl and stir until sauce is well-combined.
  • Spread a few tablespoons of the sauce in the bottom of a 9x13-inch baking dish. Spread 1/2 the chicken over the sauce. Spread about half the sauce over the chicken and top with 1/3 the cheese. Spread a layer of tortillas over the cheese. Spread remaining 1/2 the chicken over the tortillas, and top with almost all of the remaining sauce, reserving 1/2 cup sauce. Top with 1/3 the cheese, remaining tortillas, the reserved 1/2 cup sauce, and remaining 1/3 cheese.
  • Bake casserole in the preheated oven until bubbling, about 40 minutes. Increase the oven temperature to broil. Broil the casserole until top is golden, 2 to 3 minutes more.

1/4 onion (chopped)
3 cups chicken (cooked; shredded)
1 cup chicken broth
8 oz sour cream
1/2 cup salsa
1 can rotel (drained)
2 cups cheese (mexican blend)
3 low carb tortillas (or 10 street taco size; or a combo)
1 tsp cumin
1 tsp New Mexico chili powder
1 tsp Mexican oregano
1 tsp salt

Steps:

  • Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
  • Melt butter. Add chopped onion. Cook 3 to 4 minutes until soft. Add flour, cook an additional 3 to 4 minutes to remove flour taste. Add chicken broth. Cook until slightly thickened about 5 minutes.
  • Stir in sour cream, salsa, and rotel. Add remaining ingredients. Stir in cheese.
  • Put mixture into baking dish. Cover. Bake 20 minutes. Uncover and bake an additional 15 minutes, broiling a final minute if desired for browning.
  • Let sit 15 minutes before serving.

1/4 cup chopped fresh cilantro or 1/4 cup parsley
1 tablespoon chili powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon salt
fresh ground pepper
1 1/2 teaspoons canola oil
1 large onion, chopped
1 red bell pepper, diced
2 garlic cloves, minced
2 cups diced cooked skinless chicken
10 corn tortillas, cut in quarters
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Preheat oven to 375°F.
  • Bring broth to a simmer in a medium saucepan. Whisk milk and flour in a small bowl until smooth. Add to the broth and cook over medium heat, whisking constantly, until thickened and smooth, about 3 minutes. Remove from the heat and stir in yogurt, tomatoes, chiles, cilantro (or parsley), chili powder, oregano and cumin. Season with salt and pepper.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion, bell pepper and garlic; cook, stirring occasionally, until tender-crisp, about 3 minutes.
  • Line the bottom of a shallow 3-quart baking dish with half the tortillas. Top with half the chicken and half the onion mixture. Spoon half of the sauce evenly over the top. Repeat layers with remaining tortillas, chicken, onion mixture and sauce. Sprinkle with Cheddar. Bake until bubbly, 25 to 30 minutes.
