BAKED HAM WITH LOW CARB MAPLE BOURBON GLAZE



Baked Ham with Low Carb Maple Bourbon Glaze image

Number Of Ingredients 7

9 to 10 pound hickory smoked ham (fully cooked), butt portion
1 teaspoon maple extract
1 teaspoon dry mustard
1 teaspoon white vinegar
1 1/4 cups sugar substitute (recommended: Splenda)
2 to 3 tablespoons bourbon
1 tablespoon whole cloves

Steps:

  • Preheat oven to 325 degrees F.
  • Place ham face down in a shallow baking pan and cover loosely with aluminum foil.
  • Place on lower rack of oven and bake for 1 hour.
  • While the ham is baking, mix together all the glaze ingredients in a bowl and set aside.
  • After 1 hour of cooking, remove ham from oven, uncover and stand ham up on 1 side. With a sharp knife and in a "tic-tac-toe" fashion, make shallow cuts all over the fatty side of the ham, scoring 1-inch squares. Insert single whole cloves in every corner of the squares created by the cuts. Pour the glaze over the top and let drip down the ham. Place uncovered ham back in the oven and cook for another 30 minutes. Remove from oven and let stand 15 minutes before slicing.

4 oz cream cheese (softened)
½ cup butter (softened)
½ cup confectioners erythritol
¼ tsp ground cloves
½ tsp allspice
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
1 pinch salt
1/2 tsp baking poder
5 eggs
2 cups fine almond flour
8 oz cream cheese
½ tbsp confectioners erythritol
3 tbsp sugar free maple syrup
3 tbsp crushed pecans or walnuts (optional)
2 tbsp sugar free maple syrup
3 tbsp bourbon

Steps:

  • Preheat oven to 350º F.
  • Mix softened butter and cream cheese in a large bowl. Then, add in all other ingredients and mix well.
  • Add mixture to treated (with spray or butter) bundt pan or baking pan.
  • Bake for 20-30 minutes, or until knife comes out clean and edges begin to brown.
  • Soften cream cheese in microwave for 30 seconds.
  • Mix cream cheese, erythritol, and 3 tbsp maple syrup together. Heat in microwave for approximately 40 seconds. Pour over cake.
  • Optional: Mix additional maple syrup and bourbon, then add per piece if desired.

1 can (15 ounces) solid-pack pumpkin
4 large eggs
1/2 cup canola oil
1/3 cup sugar
2 tablespoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground allspice
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
GLAZE:
2 cups confectioners' sugar
3 to 4 tablespoons 2% milk
2 tablespoons maple syrup
1/2 teaspoon maple flavoring
1/2 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Place first 10 ingredients in a large bowl; beat on low speed 30 seconds. Beat on medium 2 minutes. Pour into a greased and floured 10-in. fluted tube pan., Bake 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely., Whisk confectioners' sugar, milk, syrup and maple flavoring until smooth. Drizzle over cake and sprinkle with pecans.
