KETO TACO CASSEROLE | DORITO CASSEROLE
A deconstructed taco - into a casserole! Add some pork rinds and keto Dorito seasoning and you've got a Dorito casserole. Very versatile and 100% keto friendly.

Steps:
- In a pan over medium heat, cook your minced beef until it is brown and no pink colour remains.
- Stir in the taco seasoning and 1/2 of the salsa. Take off heat.
- In a mixing bowl, whisk together the sour cream and 1/2 (100g) of the shredded cheese. Set aside.
- (Optional) Take your casserole dish and place a layer of crumbled pork rinds to cover the bottom. Sprinkle the dorito seasoning on top.
- Scoop the beef mix into the casserole dish, on top of the pork rinds (or cover the bottom of the dish if skipping the pork rinds)
- Pour the rest of the salsa on top of the beef and spread it around but don't mix thoroughly.
- Spoon the sour cream/cheese mixture and spread on top of the salsa.
- Lastly, sprinkle the remaining shredded cheese as the final layer.
- Bake at 400°F / 200°C for 20 minutes or until the top has browned nicely.
- Serve!

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
- Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
- Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

LOW CARB / KETO DORITO TACO PIE
This is one of our favorite keto / low carb options!! You've definitely gotta try it!! It's made with a homemade crescent dough made out of mozzarella cheese, making this a very keto friendly meal.

Steps:
- Crescent Dough • 1 1/2 C mozzarella cheese • 2 oz cream cheese • 3/4 C almond flour • 1 tsp baking powder • 1 egg • 1 T powdered keto sweetner, ex Swerve • Pinch of salt
- Dough INSTRUCTIONS - 2. Melt both cheeses together slowly in microwave til they are incorporated, (30 seconds intervals) then add all other ingredients and mix until dough forms.
- 3. Roll out between parchment paper. May need to let dough sit in fridge for 20 mins if too sticky (I do this every time).
- 4. Line baking dish with parchment paper or cooking spray. Insert crescent dough.
- 1. Set oven to 400° Cook ground beef and season 2. Crush 2 bags Quest chips and layer on top of dough 3. Add taco meat 4. Mix salsa and sour cream and layer over meat. Add shredded cheese to top 5. Crush 2 bags Quest chips and add on top 6. Pour melted butter over chips. Bake 20 minutes or until golden brown
- *Check at 10 mins, and if crust is browning too quickly, cover with foil and bake for the remaining 10 mins.
