1 (16 ounce) package penne pasta
1 pound shrimp
1 pound scallops
1 (12 ounce) jar marinated artichoke hearts, drained
1 (8 ounce) jar sun-dried tomatoes, packed in oil
1 pint heavy cream
1 cup grated Parmesan cheese
½ cup pitted kalamata olives

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat a large heavy skillet over medium heat. Combine shrimp, scallops, artichokes and sun dried tomatoes, then cook until shrimp turn pink. Reduce heat, and stir in cream and parmesan. Toss with cooked pasta, and sprinkle olives on top.

1 pound beef tenderloin
2 tablespoons olive oil
Kosher salt
Freshly ground black pepper
1 pint bourbon
1/4 cup veal glace
1 cup micro greens

Steps:

  • Cut beef into 1-inch diameter medallions, 1/4-inch thick, rub with olive oil and season with kosher salt and ground black pepper.
  • Simmer bourbon until reduced by 3/4. Add veal glace. Adjust seasoning with salt and pepper. Remove from heat and chill.
  • Sear beef medallions until rare. Chill. Garnish with bourbon reduction and micro greens.

Steps:

  • Step 1 Preheat broiler with oven rack 6 inches away from element. Place butter in a large roasting pan, and place pan in oven just until butter melts. Step 2 Remove pan from oven, and stir in wine and next 6 ingredients. Add shrimp, scallops, and tomatoes, tossing to coat. Step 3 Return pan to oven, and broil 3 minutes. Stir shrimp and turn scallops; broil 2 more minutes. Remove pan from oven, and add spinach, tossing about 1 minute or until slightly wilted. Serve with French bread.

  • Sprinkle spices onto the scallops.
  • Place a few inches away from broiler fire.
  • Broil for 12 minutes.
  • Turn the scallops over and broil for another 4 minutes.
  • Serve as an appetizer or as part of a main course.

1 tablespoon garlic salt
2 tablespoons butter, melted
2 tablespoons lemon juice

Steps:

  • Turn broiler on.
  • Rinse scallop and place in a shallow baking pan. Sprinkle with garlic salt, melted butter or margarine and lemon juice.
  • Broil 6 to 8 minutes or until scallops start to turn golden. Remove from oven and serve with extra melted butter or margarine on the side for dipping.
