Steps:
- We begin making the Awadhi Style Arvi Ka Saalan Recipe, first cook the Arbi in a pressure cooker adding little water for 3 to 4 whistles and turn off the heat. Once the pressure has released, peel the skin and cut the Arbi into small cubes and keep aside.
- The next step heat oil in a pan, saute the onion that has to ground to a paste, saute till it is brown and cool it down. Once it is cooled grind into a paste.
- Heat oil in a pan, add cloves, cardamom, and cinnamon. Let it roast in the oil for few seconds.
- Add pound ginger, garlic ,and sliced onions and Saute till it is translucent and the raw smell goes away. Once that is done add the onion paste. Saute for 5 more minutes.
- Add in all the spice powders and season well with salt as required. At this point you can add in the curd as well the colocasia roots. Give it a toss and mix the gravy well with the roots.
- Cover and cook for a few minutes until the masala is well incorporated into the Arbi. Once done, check the taste and adjust the seasonings accordingly.
- Serve the Awadhi Style Arvi Ka Saalan Recipe with Achari Masala puris for a yummy lunch box meal.

Steps:
- Heat oil in a non-stick pan. Slice colocassia.
- Add cumin seeds and mustard seeds to the pan.
- Roughly chop dried chillies.
- Add onions add curry leaves to the pan and sauté till onions are translucent. Add ginger-garlic paste and sauté further for a minute.
- Grind together dried red chillies, coriander seeds, peanuts and 2 tbsps water to a smooth paste.
- Add 2 tbsps water to the pan. Add turmeric powder and red chilli powder and mix well. Add ground paste, ½ cup water and mix well. Add sliced colocassia and mix well. Cover and cook for 3-4 minutes.
- Mix dried mango powder, salt and 1 tbsp water in a bowl and add to the pan and mix well.

- Peel and slice onions. Chop tomatoes, de-seed and chop green chillies. Soak tamarind in lukewarm water for 15 minutes and squeeze out the pulp. Boil Arbi in salted water till tender. Peel, slice the bigger ones into two pieces if desired. Heat oil in a pan and sauté onions till golden brown.
- Add curry leaves, chopped chillies, ginger-garlic paste and sauté for a few minutes. Add turmeric, chilli powder and sauté for 3-4 minutes on a low heat. Add chopped tomatoes and cook till the tomatoes are completely mashed. Add the arbi and cook for 2 minutes pour one cup of water and salt, cook for 2-3 minutes. Add tamarind pulp. Cover and simmer for 15 minutes.
- Serve hot with Hyderabadi paratha.

Steps:
- BOIL the arvi in lightly salted water till tender.
- Peel and slice the bigger ones into two pieces and fry lightly in oil.
- Heat some oil in a separate pan and saute the onions till golden brown.
- Add the ginger and garlic paste and saute for another minute or two, till the raw flavour is no longer apparent.
- Add chilli and turmeric powder and salt and saute for three to four minutes.
- Add the chopped tomatoes and saute till they are completely soft and mashed.
- Add the arvi and cook for two to three minutes.
- Add one cup water.
- Add the tamarind pulp, green chillies and curry leaves.
- Cover and simmer for 10 minutes or till the arvi is tender.
- Sprinkle the garam masala powder over the arbi and serve hot.
