"This has been a favorite of our children for years. It is refreshingly different," says Carma Blosser of Livermore, Colorado. "Recently I multiplied the recipe several times and served it at a family reunion. Not a drop was left over!"

1/2 pound smoked kielbasa, cut into 1/2-inch slices
3/4 cup fresh or frozen snow peas, thawed
1/3 cup chopped green pepper
1/4 cup chopped onion
2 teaspoons curry powder
2 tablespoons butter
1 cup cooked instant rice
2/3 cup water
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup canned diced tomatoes

Steps:

  • In a large skillet, saute the kielbasa, snow peas, green pepper, onion and curry powder in butter until vegetables are tender. Stir in the remaining ingredients; heat through.

Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

1 ½ teaspoons kosher salt, plus more as needed
⅛ teaspoon freshly ground black pepper
⅛ teaspoon ground coriander
⅛ teaspoon mustard powder
⅛ teaspoon celery salt
⅛ teaspoon paprika
⅛ pinch ground turmeric
⅛ teaspoon cayenne pepper
3 tablespoons unsalted butter
½ cup finely diced onions
⅔ cup uncooked orzo pasta
1 ⅓ cups uncooked long-grain white rice
3 cups good-quality chicken broth
1 tablespoon freshly chopped parsley

Steps:

  • Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
  • Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
  • Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

3 large tomatoes, chopped (2 1/2 cups)
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 1/2 cups uncooked instant rice
Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.
  • Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling; stir in rice. Heat to boiling; reduce heat to low. Cook 8 to 10 minutes or until rice is tender. Fluff with fork before serving. Serve with pepper sauce.

1 (16 ounce) package frozen green beans
1 (4 ounce) can mushrooms
4 ounces grated swiss cheese

Steps:

  • Cut kielbasa into bite size chunks.
  • Combine first 5 ingredients in a pan and simmer for 5 minutes.
  • Stir in frozen green beans and mushrooms.

4 inches hot kielbasa (or mild, if you prefer)
1/2 package liptons chicken noodle soup
5 cups water
2 cups rice
2 tablespoons butter
1 onion
1 dash dried parsley flakes
1 dash oil (for frying)

Steps:

  • heat oil in pan.
  • Add chopped onion.
  • Fry till transparent.
  • Add kielbasa (chopped in small cubes) and fry till heated through.
  • Add 1/2 pkg of noodle in soup mix (and half of seasoning found in pkg).
  • Fry till it starts to brown.
  • Add 5 cups water and bring to a boil.
  • Add 2 cups rice and butter.
  • Turn down the heat to simmer.
  • Cover and cook till all liquid is absorbed.
  • Take off the heat and let sit for 15 minutes or so.
