CHEESY BACON TATER TOTS®
These delicious tots are great as a side dish or as a game day appetizer. The potatoes crisp in bacon grease before being baked with Cheddar cheese for an easy bacony, cheesy treat.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C).
- Cook bacon in a large cast iron skillet over medium-high heat until crispy on both sides, about 10 minutes. Place on a paper towel-lined plate and set aside, keeping the bacon grease in the skillet.
- Reduce the heat to medium and add potato nuggets to the skillet. Season with garlic salt and toss until evenly coated. Cook until the outsides are crisp, about 10 minutes, turning carefully with a spatula once or twice. Remove the skillet from heat.
- Carefully remove 1/2 of the potato nuggets from the skillet and spread out remaining nuggets in a single layer. Top with 1/2 of the Cheddar cheese. Place remaining nuggets on top of the cheese and top with remaining cheese.
- Transfer the skillet to the preheated oven and bake until nuggets are warmed through and the cheese is melted and starts to turn golden brown, about 10 minutes.
- While the nuggets are baking, crumble the cooked bacon. Remove the skillet from the oven and top with crumbled bacon, sour cream, and green onions.

Steps:
- Heat a pan over medium-high heat. Add the ground beef and break up into smaller bits using a spoon or spatula.
- Add the cayenne, cumin, onion powder, garlic powder, pepper, and salt, then mix until evenly incorporated.
- Add ketchup. Mix thoroughly allowing beef to cook all the way through.
- Remove the pan from heat, and drain excess fat.
- Add the grated potatoes to a bowl, and add in the flour and 1 teaspoon of salt. Stir to combine.
- Using the palm of your hand, spread 1 tablespoon of the potatoes into a thin pancake.
- Add 1 teaspoon of the beef, then press a cheese cube into the middle.
- Fold potato over beef and cheese, then create a fist around the tot while using your opposite hand to flatten both sides, creating the cylindrical tot form.
- Heat vegetable oil over high heat until temperature reaches 360˚F (182˚C).
- Fry the tots in batches for about 5 minutes, until golden brown.
- Transfer fried tots to a paper towel-lined plate to drain. Serve immediately.

- Bring a large pot of water to a boil. Add whole potatoes; boil until just soft, 15 to 20 minutes.
- Shred potatoes using a food processor. Transfer to a large bowl; allow to cool, about 10 minutes.
- Mix Cheddar cheese, fontina cheese, seasoned salt, garlic powder, and black pepper into potatoes until well combined. Shape 2 tablespoons of potato mixture at a time into thick disk shapes.
- Pour flour into a bowl. Whisk eggs together in a separate bowl. Pour panko into a separate bowl. Roll potato disks in flour, coat with egg, and roll in panko.
- Heat 2 inches oil in a heavy skillet to 350 degrees F (175 degrees C). Fry tots in batches until crispy and golden, about 4 minutes. Cool on a paper towel-lined tray, about 5 minutes. Season with salt.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the chili, tomato sauce, olives and chilies. Transfer to two greased 8-in. square baking dishes. Sprinkle with 1 cup cheese; top with Tater Tots. Cover and freeze one casserole for up to 3 months. , Cover and bake the remaining casserole at 350° for 30-35 minutes or until heated through. Sprinkle with 1/2 cup cheese. Bake 5 minutes longer or until cheese is melted. , To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). - Make the sesame kimchi mayonnaise: In a small bowl, stir together the mayonnaise, sesame seeds, garlic powder, and kimchi brine.
- Make the grilled cheese: Spread the kimchi mayo over on one side of each slice of bread.
- Heat a large nonstick skillet over medium heat. Place one piece of bread, mayo side down, in the pan and top with the kimchi, Cabot 1 Year Cheddar Cheese, and ½ tablespoon cilantro. Cover with the remaining slice of bread, mayo side up. Cook for 2-3 minutes, until the bottom slice of bread is golden brown, then use a spatula to flip the sandwich and and cook for 3-5 minutes on the other side, until the bread is golden brown and the cheese is completely melted. Remove from the pan and let rest for 1 minute before slicing.
