KING RANCH BEEF CASSEROLE
This King Ranch Beef Casserole is a tasty twist on one of the most popular recipes on It Is a Keeper. It's one of the best easy crock pot recipes.

Steps:
- Preheat oven to 350⁰
- In a skillet over medium high heat melt butter and then add in pepper and onion cooking until they become tender and fragrant (2-3 minutes)
- Add beef salt and pepper to skillet then brown, drain fat
- Stir in packet of taco seasoning mixing until beef is evenly coated
- In a sauce pan over medium heat combine onion, bell pepper, cream of chicken soup, cream of mushroom soup,tomatoes with chilies, and the Velveeta cheese and one cup of the cheddar. Add in Tabasco and Worcestershire sauce. Stir occasionally until cheese is melted.
- Prepare a 9X13 casserole dish with coat with non-stick spray.
- After preparing your casserole dish, cover the bottom with crushed tortilla chips to create a crust
- Layer half the browned beef on top of the chips
- Then add half the sauce on top of the beef
- Repeat with chips, beef, and sauce
- Top with remaining cheddar cheese
- Bake at 350⁰ for 30 minutes or until cheese is bubbly

- Preheat oven to 350 degrees. Heat a skillet over medium heat and add the beef and onions. When meat has almost cooked all the way add the bell pepper and sprinkle with a dash of salt. When the meat is brown and thoroughly cooked drain the grease from the pan. Heat a medium size sauce pan over low/medium heat. Add the cream of mushroom, cream of chicken, rotel tomatoes, garlic powder and chili powder. Stir and cook until the mixture is warm and then turn off the heat. Tear each tortilla into pieces and dip each piece into the sauce mixture. (Does not have to be well coated in the mixture or you will use it all up and won't have enough for the dish) Place the tortillas down in a large casserole dish. Then top with half of the meat mixture and then half of the sauce. Sprinkle 2 cups of the cheese over the sauce and then repeat the layers finishing with the rest of the cheese. Cook for 40 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles and juice, chicken broth, onion, and canned green chiles together in a bowl, stirring until thoroughly combined.
- Place 1/3 of the tortilla strips in a layer into the bottom of a 9x13-inch baking dish; top with 1/3 of the chicken mixture. Repeat layers twice more; sprinkle Monterey Jack cheese on top of the casserole.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a large skillet over high heat. Saute onion, red bell pepper, and green bell pepper in hot oil until warmed through, about 2 minutes.
- Combine onion-pepper mixture, cream of mushroom soup, cream of chicken soup, diced tomatoes, chicken broth, sour cream, cumin, ancho chile powder, oregano, and chipotle chile powder together in a large bowl and stir until sauce is well-combined.
- Spread a few tablespoons of the sauce in the bottom of a 9x13-inch baking dish. Spread 1/2 the chicken over the sauce. Spread about half the sauce over the chicken and top with 1/3 the cheese. Spread a layer of tortillas over the cheese. Spread remaining 1/2 the chicken over the tortillas, and top with almost all of the remaining sauce, reserving 1/2 cup sauce. - Brown meat, onion, salt, pepper and garlic powder.
- Mix soups, milk, water, picante sauce and green chilies (Note:Some people like less than the whole can, it's ok to add less.) to make a soup mixture.
- Layer tortillas, meat, soup mixture and cheese twice in casserole.
- Cover with foil and bake @ 350 degrees for 20 to 45 minutes. (I do about 40) Take off foil for the last 5 minutes.
- Let cool, and eat :].

- Boil chicken in broth or stock, I cut the chicken into cubes with kitchen scissors before boiling. Save the stock in case you need to add a bit of liquid to the mixture.
- Combine Rotel, soups, onion, olives, and chicken.
- In a large Pyrex baking dish layer crushed Fritos, cheese, and chicken mixture. Repeat layers until all is used, ending with crushed Fritos.-.
- Heat until bubbly @ 350 degrees.
- When done, cover top Frito layer with cheese, and put back in oven until melted.
