0.5 cups garlic
2 cups soy sauce
2 cups brown sugar
2 teaspoons five spice powder
1 teaspoons red chili flakes
35 dashes sesame oil

Steps:

  • Mince fresh ingredients to fine consistency. Assemble other ingredients within easy reach.
  • Heat soy sauce in medium saucepan as you mix in remaining ingredients. Simmer over medium heat to a syrup consistency. Monitor heat closely to ensure sugar does not burn by constant stirring to dissolve completely.

1 lb pork roast or 1 lb pork butt, not too lean
2 tablespoons soy sauce
2 tablespoons red pepper paste, kochu jang
2 tablespoons wine or 2 tablespoons sherry wine
3 tablespoons sugar
1 tablespoon sesame oil
1 tablespoon roasted sesame seeds
2 tablespoons chopped green onions
1 teaspoon minced garlic
1 teaspoon minced ginger
1/4 teaspoon black pepper

Steps:

  • It is easiest if you get thinly sliced pork roast in a Korean market. If you get the whole roast, freeze slightly and slice thinly, about 1/8-1/4 inch thin, score meat lightly. Set aside into mixing bowl.
  • Mix rest of ingredients together and pour into bowl with the meat. Using hands knead the meat making sure that the marinade covers each piece completely.
  • Set meat aside into refrigerator to marinate for at least 1/2 hour.
  • You can grill or broil the meat. I would lay some foil down first and poke holes into the foil. Or you can fry it in a hot pan coated with a little oil.
  • Cook meat until lightly browned.
  • Serve with plenty of steamed rice and your choice of Asian vegetables.

This is my take on the classic Korean fried chicken sauce. I like to add lots of green onion and garlic, and not cook this quite as long. The result is a sauce with those ingredients a little more in the flavor profile's forefront. Try to find Korean chili flakes and/or paste if you can. I've used them before and the flavor is great (and obviously more authentic), but if you can't, any hot chili flakes or paste will work.

½ cup ketchup
2 green onions, minced
4 cloves garlic, minced
1 lemon, juiced, or more to taste
2 tablespoons honey
1 tablespoon chile-garlic sauce (such as sambal), or to taste
1 teaspoon red pepper flakes, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ cup water, or as needed
1 pinch salt, or to taste

Steps:

  • Whisk ketchup, green onion, garlic, lemon juice, honey, chile-garlic sauce, red pepper flakes, and black pepper together in a saucepan over medium-high heat; add enough water to reach desired sauce consistency. Bring sauce to a simmer; reduce heat to medium-low, and simmer until thick and flavors blend, about 5 minutes. Cool to room temperature and season with salt.

  • Combine Asian pear, onion, jalapeno peppers, red pepper flakes, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon sugar, sesame oil, garlic, and mustard in a blender; puree into a smooth sauce.
  • Heat olive oil in a large skillet over medium heat. Add chicken; cook until browned, about 5 minutes. Increase heat to medium-high; pour in sauce. Cook until flavors combine, 3 to 4 minutes. Garnish with green onion and sesame seeds.
