EPIC salad to end the week - learn how to make this in my last #igtv post ????????????????‍???? Rice and cucumber noodles with greens, homegrown mung and pea sprouts and Korean #gochujang dressing + gochujang-rubbed roasted cauli. Below is the recipe for the dressing and rub - the salad ingredients can be varied to fit whatever you have :) The recipe is on the spicier side, but you can easily adjust to gochujang amount to your taste ❤️ #????️

Number Of Ingredients 12

1 1/2 tablespoons gochujang paste
1 tablespoon toasted sesame oil
1/2 tablespoon soy sauce
1/2 tablespoon vinegar of choice
1 tablespoon maple syrup
1 tablespoon grated ginger
2 spring onions chopped
2 tablespoons gochujang paste
1 tablespoon miso paste (any)
2 tablespoons oil of choice
2 cloves garlic, grated
1 tablespoon ginger, thinly sliced

Steps:

  • Whisk all of the dressing ingredients together into a bowl and drizzle over salads, stir fried vegetables or use as a semi-hot sauce.
  • Combine all of the ingredients into a bowl and mix until well combined. Store in a air tight container. Can be used as a rub for oven-roasted cauliflower, cabbage, tofu and more

Gochujang is a fermented hot pepper paste and a staple in Korean cooking. Here, we use a few pantry staples to transform it into a spicy-sweet dressing.

Number Of Ingredients 7

¼ cup gochujang (aka Korean hot pepper paste; look for this condiment in Korean or Asian grocery stores and in the international aisles of your local market.)
2 tbsp sesame oil or safflower oil
2 tbsp rice vinegar
1 tbsp raw honey (TRY: Wholesome Sweeteners Organic Raw Honey)
2 tsp peeled and minced ginger
2 tsp roasted sesame seeds + additional for garnish (TRY: Simply Organic Whole Sesame Seed)
1 tsp reduced-sodium tamari (TRY: San J Reduced-Sodium Tamari)

Steps:

  • In a bowl, whisk together all ingredients until smooth. Serve with additional sesame seeds (if using). Cover and refrigerate up to 1 week.
