1 ½ lb boneless pork shoulder, or pork belly, chilled or frozen for easier slicing
½ onion, sliced into thin strips
3 stalks green onion, sliced into 2-inch (5 cm) pieces
3 cloves garlic, minced
1 teaspoon ginger, minced
¼ cup korean red chili paste, gochujang
1 teaspoon red pepper flakes
¼ cup soy sauce
3 tablespoons rice wine
1 tablespoon sesame oil
1 tablespoon sugar
1 teaspoon black pepper
1 tablespoon canola oil
sesame seed, to garnish
rice, to serve

Steps:

  • Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
  • Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
  • Cover and marinate in the refrigerator for at least 30 minutes.
  • Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
  • Sprinkle a bit of sesame seeds on top, then serve with rice!

2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons red pepper powder
8 cloves garlic, minced
1 tablespoon grated ginger
1 cup onion
3 lb baby back ribs
¼ cup honey
sesame seed, for garnish
scallion, chopped, for garnish

Steps:

  • Combine marinade ingredients in a bowl.
  • Pour marinade over ribs and let them marinate for at least four hours.
  • After marinating, place ribs on baking dish. Reserve the marinade for later.
  • Bake ribs at 325°F (160°C) for two and a half to three hours.
  • Pour the leftover marinade into a saucepan, add the honey, and bring to a boil to form a glaze. Set aside.
  • After two and half to three hours, remove the ribs from the oven. Pour the glaze over the ribs and broil for 5 to 10 minutes.
  • Cut up the ribs, sprinkle sesame seeds over, and garnish with scallions.

2 teaspoons rice wine vinegar
3 tablespoons dark soy sauce
4 tablespoons honey
30 mL bourbon whiskey
15 mL fresh lime juice
4 medium cloves garlic cloves, finely chopped
2 teaspoons smoked paprika
4 tablespoons dark muscovado sugar
1 teaspoon red chili flakes
2 teaspoons corn flour
1 teaspoon sesame seeds
1 whole rack of pork ribs
1 tablespoon kosher salt
1 tablespoon pepper
1 tablespoon dark muscovado sugar

Steps:

  • Preheat the oven to 150 degrees celsius.
  • Mix together the salt, pepper and sugar for the rub and apply liberally over the ribs.
  • Wrap entirely in foil and bake in the oven for 2 hours at 150 degrees celsius / 300 degrees Fahrenheit.
  • In a saucepan, combine all of the sauce ingredients and bring to a boil then immediately reduce the heat until the sauce thickens and then set aside.
  • Remove the ribs from the oven and unwrap from the foil. Brush a generous amount of the BBQ sauce over both sides of the ribs and place back in the oven for a further 10 minutes.
  • Remove from the oven, brush more bbq sauce on and sprinkle with sesame seeds.
  • Enjoy!

1 onion, 1/2 roughly chopped and 1/2 thinly sliced

½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving

Steps:

¼ cup barbecue sauce, or to taste

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.

1 teaspoon ground black pepper

2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • Whisk together the soy sauce and sugar in a bowl until the sugar has dissolved, and stir in the black pepper, garlic, green onions, sesame oil, and sesame seeds.
  • Place the ribs in a large bowl, and pour the marinade over the ribs. Stir to coat the ribs with the marinade, and refrigerate for 1 hour. Stir the ribs and marinade again, and refrigerate for 1 more hour.

  • First, mix all the marinade ingredients together in a bowl. Then marinate the ribs in the fridge for at least a couple of hours (overnight is preferred). Using a sealed plastic storage bag is a good way to do this.
  • Pre-heat the oven to 130C (about 265F). Baste the ribs with marinade and wrap them individually in some tin foil. Place them on a rack on a roasting tray or broiler, and fill the tray with a layer of water (say 1/4"). Make sure you keep all the marinating liquid for basting later.
  • Now put the ribs in the oven. When the 2 hours are finished, the ribs should be quite tender, depending on their thickness. If not, you may want to cook them for a bit longer. The ones I photographed here were already almost falling off the bone.
  • Then remove from the oven and place them under a hot grill (or ON a hot grill, depending what you have available - you may want to finish them off on the BBQ, if you have one).

Coat the ribs well with the marinade, and marinate them for a minimum of eight hours (preferably 24 hours to 48 hours). Turn them over once after half of the marinating time has passed. (You can use large zip lock bags for easier handling.)
  • Preheat the oven to 325°F (300°F if using a convection oven). Line a baking sheet with aluminum foil. I used 2 baking dishes. Arrange the ribs, meat side down. If using the mild marinade, pour some marinade into the baking sheet or dish. Cover the baking sheet/dish tightly with aluminum foil. Bake them for 1.5 hour (2 hours if you want fall off the bones tenderness). Remove the foil cover.
  • Option 1: Change the oven setting to broil (500°F) and preheat for a few minutes. Then broil the ribs until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce a couple of times while broiling.
