A former student gave me this recipe. He made it for lab one day and everyone thought they were awesome. I've made them since and gotten similar reviews.

6 eggs
2 ⅓ cups packed brown sugar
2 cups white sugar
½ tablespoon vanilla extract
4 teaspoons baking soda
1 cup butter
2 ⅔ cups peanut butter
9 cups rolled oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • Cream butter and peanut butter together. Add the sugars and stir until well mixed.
  • Add eggs one at a time, then add vanilla.
  • Mix oatmeal and baking soda separately, then stir into batter.
  • Add chocolate chips last.
  • Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

1 cup butter, softened
½ cup brown sugar
1 egg
¾ cup molasses
3 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon ground cinnamon
1 teaspoon ground ginger

Steps:

  • In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda, cinnamon and ginger; stir into the molasses mixture. Cover the dough and chill for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

These chewy cookies are what you remember from your childhood....soft inside, a fragrant spicy aroma, and a crinkle-top that is crusted with sugar. The only change I made from my Grandma's recipe was to get rid of the artery-clogging shortening. These cookies hold up well for shipping - I mail them to my kids who are in college.

1/2 cup butter, room temperature
1 cup brown sugar, packed
1/4 cup molasses
1 egg
2 cups flour
1/4 cup wheat germ
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 teaspoon baking soda

Steps:

  • Using a strong mixer, mix butter and sugar until sugar has aerated the butter and it is light and fluffy (5 minutes). Blend in molasses and egg gently.
  • While butter/sugar is mixing, blend all dry ingredients in a separate bowl. Add to creamed mixture in thirds until fully blended (this is where the powerful mixer comes in handy!).
  • Refrigerate 1 hour (which makes it easier to roll into balls).
  • Form into balls a little smaller than a golf ball and roll in sugar. Place on parchment paper or greased sheet.
  • Bake 350 degrees for 12-13 minutes (for 20 large cookies).
  • Hint - When the cookies are done baking, they puff up in the center and crack, but wait until the inside of the crack turns from shiny dark brown (not cooked) to medium brown (done).

Taken from my mom's treasury of recipes. You can substitute craisins instead of the raisins - they taste wonderful too!

1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 cups rolled oats
1/2 cup nuts, chopped (optional)
1 cup raisins
1/2 cup butter, softened
1 1/4 cups sugar
2 eggs, well beaten
6 tablespoons molasses

Steps:

  • Combine first eight ingredients in a bowl and mix well. In a separate bowl cream together the remaining four ingredients and mix with dry mix. Drop by teasoonfuls on cookie sheet and bake at 325 degrees for 12-15 minutes.
