CHEESE CORN CASSEROLE
A tasty, slightly rich side dish that my whole family fights to get to. It's also very easy to prepare.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray one 10x10 inch pan with non-stick cooking spray.
- ina medium skillet, saute onions in butter over medium heat until soft; set aside.
- In a medium sized bowl, combine corn muffin mix, milk, corn and hot sauce.
- Pour cornbread into baking dish and layer with onions, followed by sour cream and cheese.
- Bake for 25 to 30 minutes, cover for last 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and crumble.
- In a 9x13 inch casserole dish combine bacon, creamed corn, whole kernel corn, butter and processed cheese; mix well.
- Bake in preheated oven for 25 minutes; stir. Bake another 20 minutes, or until heated through and set.

- Preheat the oven to 375 degrees F. Butter an 8-inch square baking pan and set aside.
- Combine the cornmeal, flour, sugar, kosher salt, baking powder and baking soda in a large bowl and set aside. Whisk together the butter, buttermilk and eggs in a bowl and stir to combine. Pour the buttermilk mixture into the cornmeal mixture and stir until smooth, then fold in the Cheddar cubes, grated Parmesan and 1/2 cup shredded Cheddar.
- Pour the batter into the prepared pan and bake for 25 minutes. Sprinkle the remaining 1/2 cup Cheddar on top of the batter and continue to bake until the cheese is bubbling, the cornbread bounces back when pressed with a finger and a cake tester comes out clean, 10 minutes more.

- In a 10-inch (25 cm) cast iron skillet set over medium heat, add the olive oil, garlic, and onion, and cook until the onion is softened, 5 to 7 minutes.
- Preheat the oven to 400°F (200°C).
- Add the grated sweet potato, season with salt and pepper, and continue to cook until the sweet potato is tender, 8 to 10 minutes.
- Add the spinach and stir until wilted, about 1 minute, then fold in the leftover creamed corn, herbs, and cayenne, if using.
- Season again to taste and stir until warmed through, about 1 minute.
- Use the back of a wooden spoon to create four small indentations for the eggs and add each egg, being careful not to break the yolks.
- Sprinkle with Parmesan cheese and place in the oven.
- Bake until the egg whites are just set and the top begins to turn golden, about 15 minutes.
- Sprinkled with flaky salt, additional herbs, and additional Parmesan cheese.

- Set oven to 350 degrees F.
- Butter a 2-quart casserole dish.
- In a large skillet melt butter over medium heat.
- Add in chopped onion and bell peppers; saute until tender (about 3-4 minutes).
- Stir in flour and mix/whisk for 1 minute.
- Add in half and half cream; cook stirring/whisking constantly until thickened and smooth.
- Remove from heat then add in the shredded cheddar cheese and Parmesan cheese (if using) mix until all the cheese has melted.
- Whisk in eggs then add in the corn, salt and pepper; mix to combine.
- Transfer into prepared dish then top with bread crumbs.
- Bake for 40-45 minutes.
- Serve immediately.
