SLOW COOKER CRACK CHICKEN
This Slow Cooker Crack Chicken (Cheddar Ranch Chicken) is an addicting concoction of chicken, cheese, bacon and perfectly seasoned with ranch dressing. Cooking this in the slow cooker takes all the work out of it and makes it a super simple hearty dinner on busy days.

Steps:
- In a slow cooker add the chicken to the bottom. Sprinkle with dry ranch seasoning. Top with cream cheese. Cover and cook on low for 6-8 hours or high for 4 hours long.
- Shred the chicken with two forks. Top with bacon and sprinkle with cheese. Cover until melted. Serve on buns, over rice and garnish with green onions.

I originally got this recipe off the net for a recipe request and have played around with it a bit. It's changed from the original, but good, I think.

- Place chicken breasts in crock pot.
- Combine remaining ingredients and pour over chicken.
- Cook on medium setting for 5-6 hours.
- Serve with steamed rice.

RUM AND PORK POT ROAST

Steps:
- Pat pork dry. Make shallow incisions all over one side of the meat, about 1/8-inch apart. Spread garlic over this surface of meat, pressing into cuts. Repeat with ginger and cardamom seeds or powder. Follow with salt and pepper and bay leaves. Add pineapple juice to casserole dish just large enough to hold meat. Add pork, seasoned side up. Cover and reduce heat to 1/4 power and cook gently for 20 minutes.
- Preheat oven to 350 degrees F.
- After 20 minutes, turn pork. Remove cover and transfer pork to oven. Roast 2 hours 15 minutes, turning once halfway through.
- When pork is tender, remove to a serving platter, reserving juices. Skim fat from juices and bring juices to a boil. Mix together 1/8-cup rum and arrowroot; add to juices. Boil until it begins to thicken. Season with salt and pepper.
- Heat butter in skillet over medium heat. Add pineapple slices, then remaining cup of rum. Flame.
- To serve, surround pork with pineapple and coat with sauce.

CROCK POT CARIBBEAN CHICKEN IN RUM
Delicious recipe originally from the Sunset Crockery Cookbook. I made a few changes when I tried the dish. I used about 3 pounds of skinless chicken thighs instead of an entire chicken. Not having nutmeg, and liking extra heat, I sprinkled the chicken with ground red pepper instead. Also I didn't have pimentos or almonds.

- Put onions, garlic, ginger and pimentos in crock pot.
- Arrange chicken pieces on top.
- Sprinkle with nutmeg.
- Mix lime juice, rum and red pepper flakes.
- Pour mixture over chicken.
- Cook on low for 6 1/2 to 7 hours.
- If a thick sauce is desired: Remove chicken and keep warm.
- Mix cornstarch with 2 T water and blend into a liquid.
- Add cornstarch mixture to crock pot.
- Cover and cook on high for about 10 minutes, stirring 2 or 3 times.
- Season with salt to taste.
- If desired, toast almonds in frying pan under medium heat.
- Pour sauce over chicken.
- Sprinkle with almonds.
- Serve over rice.

GARLIC-ROSEMARY SLOW COOKER WHOLE CHICKEN

- Place potatoes in the bottom of a slow cooker. Add onion over the top of the potatoes.
- Remove the chicken parts inside the cavity and pat the outside of the chicken dry. Slice deep, garlic clove-width slits into your chicken with a knife. Make 4 cuts on each side of the chicken, and 1 in each of the drumsticks. Stick a sliver of garlic deep into each cut. Place the remaining chunks of garlic into the cavity.
- Starting on the back of the chicken, season generously with about 1/2 of the rosemary and cracked salt and pepper. Add some seasoning inside the chicken's cavity as well. Flip the chicken and place it breast side up in the slow cooker on top of the potatoes and onions. Season the top of the chicken generously with the remaining rosemary and more cracked salt and pepper.
- Cook on Low until the chicken is cooked through completely and the juices run clear when the chicken is cut, 8 to 10 hours, depending on the size. Serve with the potatoes and onions from the pot.
