Here's what you need: matcha powder, hot water, agave nectar, milk

1 ½ teaspoons matcha powder, plus more for dusting
1 tablespoon hot water
½ tablespoon agave nectar, optional
1 cup milk

Steps:

  • Add the matcha to a mug and pour in the hot water and agave.
  • Whisk with a small whisk or a matcha whisk, until tiny bubbles form on the surface.
  • Froth the milk by adding it to a resealable jar. Shake vigorously until many bubbles form. Then, microwave the milk for 45 seconds to 1 minute, which will help create stable bubbles.
  • Pour the milk into the tea.
  • Dust the top with more matcha, if desired.

1/2 cup milk
1/3 cup hot brewed Easy Espresso

Steps:

  • Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup., Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/8 to 1/4 cup; set aside., Pour Easy Espresso into a cup; pour in remaining hot milk. Spoon foam over top and serve immediately.

Latkes (potato pancakes) are a must have at Hanukkah, but really are wonderful any time of year! This is my mother's recipe, which is honestly the best latke I've had. I usually end up having to make a second batch because they disappear so quickly. I've tried other recipes and always return to these. Lovely topped with sour cream or applesauce.

3 cups shredded potato
¼ cup grated onion
2 eggs, beaten
6 saltine crackers, or as needed, crushed
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup vegetable oil, or as needed

Steps:

  • Mix potato, onion, eggs, crackers, salt, and pepper together in a large bowl.
  • Pour enough vegetable oil into a skillet to fill about 1/2-inch deep; heat over medium-high heat.
  • Drop spoonfuls of the potato mixture, first pressing potato mixture against the side of the bowl to remove excess liquid, into the hot oil; slightly flatten the latkes into the oil with the back of your spoon so they are evenly thick.
  • Cook in hot oil until browned and crisp, 3 to 5 minutes per side. Drain latkes on a plate lined with a paper towel.

Vegetable pancakes, because they're cooked in oil, have become a tradition, and potato latkes are the most common kind -- and the best loved.

Number Of Ingredients 10

2 tablespoons all-purpose flour
3 tablespoons plain breadcrumbs
3/4 teaspoon coarse salt, plus more for seasoning
1/4 teaspoon freshly ground pepper
2 large eggs, lightly beaten
3 pounds russet potatoes
1 medium onion, grated on the large, round holes of a box grater
Peanut oil, for frying
Chunky Applesauce, for serving (optional)
Sour cream, for serving (optional)

Steps:

  • With a fork, mix flour, breadcrumbs, salt, pepper, and eggs in a bowl; set aside.
  • Fill a large bowl with cold water. Peel half the potatoes; grate on the small, teardrop-shaped holes of a box grater, transferring potatoes to cold water as you work to prevent discoloration. Repeat with remaining potatoes, this time grating on the large, round holes.
  • Using a slotted spoon, transfer potatoes to a colander lined with a clean kitchen towel; add grated onion. Fold potatoes and onion in towel until as dry as possible; transfer to a large bowl.
  • Mix in reserved egg mixture. Form into 3- to 4-inch patties. In a medium nonstick skillet, heat 1/4 inch oil over medium-high heat until a drop of potato mixture sizzles upon contact. Reduce heat to medium. Fry latkes in batches, turning once, until deep golden brown, two to three minutes per side. Drain on paper towels; season with salt. Serve with applesauce and sour cream, as desired.
