HAM AND CHEESE BISCUITS {TRADITIONAL AND GLUTEN FREE RECIPES}

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 cup butter (cold and grated)
1 cup milk
1 large egg
2 cups shredded cheddar cheese
1 cup finely diced cooked ham
1/4 cup very thinly sliced green onions

Steps:

  • Preheat the oven to 450 degrees. Stir together the dry ingredients. Grate the butter into the dry ingredients and stir lightly to combine. Use a fork or pastry blender to cut in the cold butter pieces until the mixture resembles a course meal with little pea size or smaller lumps throughout.
  • Whisk the egg into the milk and then pour into the dry ingredients in the mixing bowl. Stir just long enough to combine. The mixture should be somewhat dry and just a tiny bit sticky at this point. Add the ham, cheese and onions and stir or press lightly with your hands to combine.
  • Sprinkle a tablespoon of flour onto a countertop, pastry mat, or tea towel (as described in the blog post). Dump the dough out onto this surface and sprinkle a half tablespoon or so of flour across the top of the dough. Lightly press the dough with your hands to flatten it until it is about 1" thickness. Add just a sprinkling more flour as needed, to make sure the dough isn't too sticky.
  • Use a biscuit cutter, round cookie cutter or drinking glass to cut the biscuit shapes out of the dough. You can also shape them with your hands, if that is more your style. Place the cut biscuits on a parchment or silpat lined baking sheet. Press the remaining bits of dough into a biscuit shape with your hands.
  • Bake for 16-18 minutes, until the bottom of the biscuits are lightly browned. The tops of these biscuits will not brown very much at all, although the pieces of cheese in the dough should toast nicely. Remove from the oven and transfer to a basket or cooling rack. Enjoy!

1 cup sharp cheddar cheese
2/3 cup milk, any percent
1/4 cup diced ham

Optional Topping (we liked it)
1/4 cup butter, melted
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 450*F Line a baking sheet with parchment paper, a baking mat or non-stick foil. In a bowl combine Bisquick, cheese & ham. Toss to combine. Slowly add milk and stir until all milk has been added and mixture is thick and combined. Using a cookie scoop or a large spoon, scoop out approximately 2-3 Tablespoon mounds onto prepared baking sheet. Bake for 8-10 minutes or until cooked through and edges are just beginning to turn golden. Remove from oven. If doing the topping, combine melted butter and garlic powder. Spoon over biscuits while hot. Allow to cool on racks for 3 - 5 minutes. Enjoy!

4 tubes (6 ounces each) small refrigerated flaky biscuits (5 count each)
1/4 cup stone-ground mustard
ASSEMBLY:
1/2 cup butter, softened
1/4 cup chopped green onions
1/2 cup stone-ground mustard
1/4 cup mayonnaise
1/4 cup honey
10 thick slices deli ham, quartered
10 slices Swiss cheese, quartered
2-1/2 cups shredded romaine
20 pitted ripe olives, drained and patted dry
20 pimiento-stuffed olives, drained and patted dry
40 frilled toothpicks

Steps:

  • Preheat oven to 400°. Cut biscuits in half to make half-circles; place 2 in. apart on ungreased baking sheets. Spread mustard over tops. Bake until golden brown, 8-10 minutes. Cool completely on wire racks., Mix butter and green onions. In another bowl, mix mustard, mayonnaise and honey. Split each biscuit into 2 layers., Spread biscuit bottoms with butter mixture; top with ham, cheese, romaine and biscuit tops. Spoon mustard mixture over tops. Thread 1 olive onto each toothpick; insert into stacks. Serve immediately.
