TURKEY MEATBALLS WITH MUSHROOM GRAVY
This is a yummy, easy and healthy recipe born out of the need for something flavorful but within my "cleanse" diet guidelines. Though I used the 85/15 ground turkey, you can use the leaner, and save some fat calories. The mushroom gravy sits great on top of the meatballs which you can serve over brown rice, (how I ate it) or over egg noodles, (how my husband ate it). I think this would be a real treat with portabella mushrooms for the gravy, but didn't have them on hand. Hope you enjoy it!

- Preheat oven to 350 degrees F.
- Chop celery and red onion thinly, nearly a mince. Mince the garlic. Reserve 1minced clove for mushroom gravy.
- Combine the ground turkey, onion, celery, (2) garlic cloves, spices and egg whites together in a medium sized mixing bowl.
- Add 2 tbs of the brown rice flour. (You could use about a 1/4 to 1/2 a cup of cooked brown rice in place of flour). After mixing all ingredients very well, shape meat mixture by hand into 8 - 2" to 2 1/2" meatballs.
- Coat a 9" x 12" casserole dish with vegetable oil spray and place the meatballs into the casserole. Place in the oven and bake for 1 hour.
- 15 minutes before the meatballs are finished baking, start the mushroom gravy by placing the 3rd minced clove of garlic into a saute' pan with the olive oil and saute' until tender. Add the mushrooms and saute' for a few minutes over medium heat and then gradually add the brown rice flour and stir until there is a coating on the mushrooms. Add the chicken broth and reduce heat. Stir until slightly thickened and let the broth reduce to a gravy at a simmer, about 5 minutes, stirring as necessary.
- Serve the meatballs and mushroom gravy over hot brown rice or egg noodles.
MY FAVORITE TURKEY MEATBALLS IN MUSHROOM GRAVY
This is one of my absolute faves. Serves great with with brown rice and green beans. I also make a vegetarian version of this for my wife with Gimmie Lean vegetarian "sausage"

Steps:
- Mix together turkey, onions, parsley, and salt.
- Shape mixture into 16 small meatballs; set aside.
- Over medium heat, cook mushrooms in the olive oil for 2-3 minutes, or until tender.
- Remove mushrooms from pan; set aside.
- Add meatballs to hot pan and saute 3 minutes, until browned, turning frequently.
- Return mushrooms to pan and add thyme, salt and pepper. Add 3/4 cup of broth and bring to a boil. Reduce heat to medium and simmer 3 minutes, until meatballs are cooked through.
- Dissolve cornstarch in remaining 1/4 cup of broth and add to pan. Simmer another minute and serve over cooked rice with green beans.

- In a small bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into 10 meatballs. Place on a rack coated with cooking spray in a shallow baking pan. Bake, uncovered, at 400° for 18-20 minutes or until no longer pink., Meanwhile, cook noodles according to package directions. In a small saucepan, melt butter. Add gravy mix. Cook and stir until lightly browned, about 1 minute. Whisk in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in mushrooms. , Drain noodles. Drain meatballs on paper towels if necessary. Serve with noodles and gravy.

I have been making Thanksgiving dinner every year since the 1970's. I have tried every kind of turkey gravy. I created this recipe about 15 years ago. It is everyone's favorite, even the people who hate mushrooms. Serve with roasted turkey and cornbread stuffing!

- Melt butter in a large stock pot over medium-low heat, and cook the mushrooms until they are browned and the butter is clear, 1 to 1 1/2 hours. Remove the mushrooms, coarsely chop them, and set aside. There should be about 1 cup of butter left in the stock pot; whisk the flour into the butter, and gently cook over low heat until the flour mixture turns mahogany brown in color, about 20 minutes. Whisk in the chicken broth; bring the mixture to a simmer to thicken the stock.
- Pour the turkey drippings into a saucepan, then cook and stir the onions and celery in the drippings over medium-low heat until the onions begin to turn brown, about 20 minutes. SWEDISH TURKEY MEATBALLS
I've tried a few different Swedish Meatballs recipes and also the sauce packets they sell at the stores but I've never been happy with the results. One night I really wanted to make Swedish Meatballs, and after looking on multiple websites for recipes, I finally gave up and made up my own. It turned out delicious!

- Mix ground turkey, bread crumbs, egg, Parmesan cheese, garlic, and Italian seasoning by hand in a large bowl. Form mixture into 1 1/2-inch meatballs.
- Place beef broth in a microwave-safe container and microwave on high until hot, about 2 minutes. Whisk flour into beef broth until smooth.
- Melt butter in a large skillet over medium heat. Add meatballs, in batches if necessary, and cook until browned on all sides, about 2 minutes per side. Reduce heat to low. Pour in beef broth slowly over meatballs. Stir in heavy cream, Worcestershire sauce, and black pepper. Cook, stirring occasionally, until meatballs are cooked through, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes; drain. Serve meatballs and sauce over noodles.

- Prepare the meatballs first. Grate the onion into a large mixing bowl, then add the ground turkey meat, egg, bread crumbs, salt, pepper, coriander, parsley and dill. Using a spatula or your hands, gently combine the ingredients together, just until uniform. Do not overmix the meatball mixture. Using a 1 tablespoon (15 ml) scoop, measure out the meat mixture for each meatball and gently roll to shape into a ball. Watch my video recipe to see how it's done.
- Preheat a large saute pan over medium-high heat and add a few tablespoons of cooking oil. Once the oil is hot, add the meatballs into pan. Fry the meatballs for 7 to 8 minutes, turning every few minutes, until they're well browned all over. The meatballs do not need to be thoroughly cooked; they will finish cooking in the sauce. Remove the browned meatballs onto a clean tray and set aside.
- Reduce the pan heat to medium and add in the butter. Once melted, add the sliced mushrooms and shallot. Saute the mixture for about 5 minutes, until the mushrooms are lightly browned. Add in the garlic, salt, pepper and paprika next and cook for another minute. Next, add in the wine (or lemon juice) and cook for a few minutes, until the wine is reduced. Add in the flour, stir until well combined and cook for 1 minute.
- Begin adding the milk gradually, whisking it into the mushroom mixture. Stir in the chicken broth and return the meatballs to the pan. Bring the sauce up to a simmer over medium heat and simmer for 8 to 10 minutes, until the sauce is thickened. The sauce will continue to thicken once it's removed from heat. Sprinkle the dish with more fresh parsley and dill, then serve over prepared mashed potatoes, pasta or egg noodles.

- Add the fresh parsley and basil to a blender and process, or finely chop. Add the chopped herbs to a mixing bowl, along with ground turkey, nutritional yeast, and salt. Combine without over mixing.
