OUR BOURBON CANDIED BACON BITES RECIPE
Our Bourbon Candied Bacon Bites Recipe, also known as Pig Candy, makes a unique edible holiday gift, and topper for salads, desserts, and soup!

Steps:
- Preheat the oven to 350 degrees F. Line two large rimmed baking sheets with foil or parchment paper. Then set a wire baking rack on each sheet.
- Mix the brown sugar, bourbon, vanilla, and crushed red pepper in a large bowl. Cut the bacon into squares and toss it in the bourbon mixture. Mix well to coat.
- Place the bacon squares on the wire racks. Brush additional bourbon mixture over the bacon, saving the rest for later. Bake for 40-60 minutes, until the bacon is brick-red and crisp. Brush the bacon with the remaining bourbon glaze halfway through baking. (Cooking time depends on the thickness of your bacon.)
- The bacon will still be a little flexible while it's hot, but should quickly cool into dry pieces that are crisp on both sides. You can take a piece out of the oven and cool it to test for doneness. Cool the bacon to room temperature, then serve or package for gifts! (Crisp dry Pig Candy can sit out at room temperature for up to 3 days. But feel free to keep it in the refrigerator, just to be safe.)

CANDIED BOURBON BACON
This candied bourbon bacon makes a delicious, crispy, crunchy addition to your breakfast table, but it is also a great appetizer to go along with cocktails in the evening.

Steps:
- Preheat the oven to 375 degrees. Line a large baking sheet with aluminum foil and a place wire rack over the baking sheet.
- Arrange the bacon strips on the rack, making sure that the strips don't overlap and there is some space between the strips.
- Use a silicone pastry brush to liberally slather the bourbon on both sides of the bacon.
- Sprinkle each slice of bacon with 1 heaping teaspoon of the brown sugar and spread out all over each strip.
- Sprinkle the strips lightly with the black pepper.
- Bake the bacon in the preheated oven until the sugar is melted and the strips are a deep golden brown in color - 18-25 minutes. Check the bacon often towards the end of cooking because it will burn quickly.
- Remove the pan from the oven and allow it to cool on the rack. It will crisp as it cools.
- When cool enough to handle, serve, and eat while warm.

- Preheat the oven to 350 degrees F.
- In a large pot over medium-high heat, bring the bourbon, 2 cups water and loose tea to a simmer. Drop the bacon cubes into the pot and continue to simmer until the bacon is cooked through and the liquid has reduced.
- In a shallow bowl, combine the brown sugar, coffee, cocoa, salt and espelette. Using a slotted spoon, removed the bacon cubes from the bourbon mixture and toss with the sugar and spices. Reserve the bourbon mixture.
- Place the coated bacon cubes in a glass baking dish and bake for 20 to 25 minutes. Remove from the oven and place on wire cooling racks set over lined sheet trays. Spoon the leftover bourbon mixture over the bacon cubes. Cool to room temperature and wrap individually in wax paper.

- Combine the honey and bourbon in a small saucepan and bring to a boil over high heat. Remove from heat and let cool slightly.
- Lay the bacon on the prepared baking sheet and roast for 10 minutes. Brush with some of the honey-bourbon syrup. Continue roasting until deeply caramelized and crispy, another 10 to 15 minutes--the bacon will really crisp as it cools. Sprinkle with 1/4 teaspoon pepper and serve.
