1 tablespoon all-purpose flour
¾ cup white sugar
1 tablespoon mustard powder
1 cup milk
2 egg yolks
½ cup tarragon vinegar

Steps:

  • In a small bowl, mix together the flour, sugar and mustard powder until evenly blended. Whisk together the milk and egg yolks in a saucepan, and slowly whisk in the mustard mixture. Stir in the vinegar. Whisking constantly, bring the mixture to a boil over medium heat, reduce heat to low, and simmer until thickened.

Ham, cheese & mushroom turnovers image

A puff pastry turnover is always a good way of using leftovers - adapt the recipe to whatever cheese you've got

Number Of Ingredients 9

250ml milk
1 tbsp each butter and flour, mixed to a paste, plus extra for dusting
140g button mushroom , cut into quarters
1 tbsp olive oil
140g ham , chopped into small pieces
85g leftover cheese (amount will vary according to type - go with your taste buds), cut into small pieces
1 tbsp chopped herbs - tarragon, parsley and chives all work well
500g block puff pastry
1 egg , beaten

Steps:

  • The first thing to do is to make a thick white sauce that will be the base of the turnover filling. Bring the milk to a simmer, then add the butter and flour paste. Whisk the paste into the simmering milk and allow it to boil for 3-4 mins, whisking gently all the time to prevent it from catching. You should now have a very thick white sauce. Cool the sauce in a bowl. Fry the mushrooms in the oil for 3-5 mins until golden, then leave to cool.
  • Place the ham, cheese and mushrooms into a bowl, then gradually add the white sauce until everything is well coated. Finally, add the herbs.
  • Roll out the pastry on a floured surface to about the thickness of a £1 coin and cut out 4 saucer-size rounds (about 18cm wide), re-rolling the trimmings if you need to. Brush the edges of each round with beaten egg. Spoon the mixture onto 1 side of each round, then fold over and seal the edges well. The turnovers can now be frozen for up to 1 month. Brush the turnover with the remaining egg, then chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Place the turnovers on a baking sheet and bake for about 35 mins until puffed up and golden. Leave to cool slightly and enjoy warm.

500g bag farfalle
50g butter, plus a little extra
200g small mushroom, halved
bunch spring onions, finely sliced
50g plain flour
500ml milk
140g thickly cut ham, chopped
140g mature cheddar, grated

Steps:

  • Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

2 tablespoons vinegar
1/2 cup cream
1 egg yolk
1 (6 to 8 pound) baked ham, sliced

Steps:

  • In a small saucepan, off heat, combine sugar, mustard, salt and pepper. Whisk in vinegar until it forms a paste. Add cream, whisking, and beat in yolk. Heat over low heat, whisking constantly, until sauce thickens slightly, do not boil or sauce will curdle.
  • Serve the sauce warm with slices of baked ham.

4 large mushrooms, sliced thin
1 cucumber, peeled, seeded, and sliced thin crosswise (about 1 1/2 cups)
2 teaspoons finely chopped fresh tarragon leaves plus tarragon sprigs for garnish if desired
2 tablespoons heavy cream
1/4 teaspoon Dijon-style mustard
a 3/4-pound ham steak, trimmed

Steps:

  • In a skillet melt the butter over moderate heat until the foam subsides and in it cook the mushrooms, stirring, until they begin to give off their liquid. Add the cucumber and cook the mixture, stirring, for 3 to 5 minutes, or until the cucumber is softened slightly. Stir in the chopped tarragon, the cream, and the mustard and cook the mixture until it is thickened slightly. Put the ham in a baking dish and spread it with the cucumber mixture. Bake the ham in the middle of a preheated 350°F. oven for 10 minutes, or until it is heated through, and garnish the top with the tarragon sprigs.

4 boneless pork loin chops (3/4 inch thick and 6 ounces each)
1/4 teaspoon garlic salt
1/4 teaspoon pepper
2 teaspoons olive oil, divided
3/4 pound sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
1/3 cup white wine or reduced-sodium chicken broth
1/4 cup all-purpose flour
1 cup reduced-sodium chicken broth
2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
2 teaspoons butter

Steps:

  • Sprinkle pork chops with garlic salt and pepper. In a large nonstick skillet coated with cooking spray, brown chops in 1 teaspoon oil. Remove and keep warm. In the same pan, saute mushrooms and onion in remaining oil until almost tender. Add garlic; cook 1 minute longer., Stir in wine. Bring to a boil; cook until liquid is almost evaporated. Combine flour and broth until smooth. Stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Return pork chops to pan and add tarragon. This is one of our favorite pasta dishes. I use honey ham from the deli and it really gives the dish good flavor. For reheating leftovers, add a little extra cream and simmer over medium low heat on stove.

1 tablespoon butter
1 onion, finely chopped

12 ounces pasta
1 large yellow onion, sliced
2 tablespoons olive oil
1 pound sliced mushrooms
1 1/2 cups ham pieces
Chopped parsley
Grated Pecorino cheese

Steps:

  • Cook pasta in boiling salted water until al dente. Reserve 1/4 cup pasta water; drain pasta and return to pot. Meanwhile, in a large skillet, combine sliced large yellow onion with olive oil; season with salt and pepper. Cook over medium-high until beginning to brown, 3 to 5 minutes. Add sliced mushrooms; cook until browned, about 5 minutes. Add ham pieces; cook until warm. Toss with pasta, adding enough pasta water to create a sauce that coats pasta. Serve topped with chopped parsley and grated pecorino cheese.

Sauteed Mushrooms With Tarragon Cream Sauce image

This is a delicious appetizer I just created last night based off of a Morel sauce recipe I found. We wanted an extra decadent button mushroom based dish, so here it is.

Number Of Ingredients 10

6 tablespoons butter
12 ounces button mushrooms
6 morels, sliced
1 shallot, minced
1/2 tablespoon dried tarragon
1 cup beef stock
1/2 cup heavy cream
1/4 cup dry white wine
crostini
salt and pepper

Steps:

  • First wipe the button mushrooms clean with a damp paper towel. Slice the morels in half first and check for bugs that might have crawled inside. If using fresh morels, wash them first; if dried you may reconsititue them by soaking them in warm water for 30 minutes.
  • Melt 4 tablespoons of the butter in a pan and saute the button mushrooms over medium-high heat for about 5 minutes or until done. Set these aside.
  • Now melt the remaining 2 tablespoons of butter in the same pan and saute the shallots over medium-high heat for about 4 minutes. Add the sliced morels and sauted for a minute more.
  • Reduce the heat slightly and deglaze the pan with the wine. Stir in the stock and cream. Add the tarragon and season to taste with salt and pepper.
  • Let the sauce bubble for a few minutes until it reaches the desired consistency, then add the mushrooms back in and heat through.
  • Serve with crostini (slices of a French bagette, toasted).

2 medium-sized cucumbers
2/3 cup cream cheese
2 tablespoons minced fresh tarragon

Steps:

  • Peel the cucumbers. Slice each about one-eighth-inch thick and spread the slices on paper towels to remove excess moisture. You should have about 40 slices.
  • Mix the cream cheese and tarragon together. Place about a teaspoon of this mixture on half the cucumber slices. It is not necessary to spread the cream cheese mixture evenly. Top each with a plain slice of cucumber, pressing it down gently to squash the cream cheese underneath so it fills the sandwich without oozing out.
  • Arrange the slices on a platter and refrigerate up to two hours before serving.
