SPICED THYME AND LIME ICED TEA



Spiced Thyme and Lime Iced Tea image

1/3 cup sugar
6 sprigs fresh thyme
2 cinnamon sticks
Juice and zest of 2 large limes
Juice and zest of 2 large limes
3 black tea bags, such as Twining's Irish Breakfast Tea
Ice

Steps:

  • Bring 6 cups water, sugar, thyme, cinnamon sticks, lime juice and lime zest to a boil in a 5-quart saucepan over medium-high heat. Remove the pan from the heat and add the tea bags. Steep the tea for 15 minutes. Remove the tea bags and allow the mixture to cool to room temperature, about 1 hour. Strain the mixture into a pitcher and refrigerate until ready to serve.
  • Pour the tea into 4 ice-filled glasses and serve.

The neat thing about Ainar is the treat at the bottom of the cup, nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is poured over assorted nuts with as much sugar or honey as you can stand. Walnut, almond, and pine nuts are the most common. Anise is said to help mamas recover from childbirth. Recipe from Penzy's Spices' 2012 early summer catalog.

  • Add spices to water (use a tea ball, if you have one) and bring to a boil.
  • Cover and simmer 15 minutes, or until flavored strongly enough.
  • Serve with nuts and sugar, to taste.
  • Sip slowly and relax.

1 cup hot water, divided
1 teaspoon yeast
2 cups all-purpose flour
2 tablespoons powdered milk
1 teaspoon white sugar
1 teaspoon olive oil
½ teaspoon baking powder
1 pinch salt
1 tablespoon olive oil
1 medium onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
salt and ground black pepper to taste
½ medium lemon, juiced
1 teaspoon sesame seeds, or as needed
1 large egg, beaten

Steps:

  • Mix 1/3 cup hot water and yeast together in a small bowl. Let sit for 10 minutes.
  • Mix in flour, powdered milk, sugar, olive oil, baking powder, and salt while adding remaining water gradually to make a combined dough. Leave in a warm place to rise for about 1 hour.
  • While the dough is rising, prepare the stuffing: Heat olive oil in a pan. Add onion, then add spinach and stir-fry for a few minutes. Season with salt and pepper and sprinkle with lemon juice. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Take small portions of the risen dough and roll into small, flat circles. Fill each circle with about 1 teaspoon spinach mixture and fold into a triangle as follows: fold one edge of the circle to the middle, then the next, then fold the third edge over the top to shape a triangle. Repeat with remaining dough and filling. Brush each piece with egg and sprinkle with sesame seeds. Place on the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 20 minutes.

Steps:

  • Fill a cocktail shaker with ice. Pour vodka, rum, gin, tequila, triple sec, and sour mix over ice; cover and shake. Pour cocktail into a Collins or hurricane glass; top with splash of cola for color. Garnish with a lemon slice.

2 cups Tang

2 packages lemon Kool-Aid
