FILIPINO LECHON (ROASTED PORK LEG)
Lechon is a national dish in the Philippines - pork leg is roasted in the oven very slowly resulting in very moist and tasty meat. It is served all year for special occasions. Serve with my recipe for lechon sauce (link in footnote).

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Rinse pork; pat dry with paper towels. Rub butter all over the skin. Sprinkle salt over the skin.
- Place pork leg on a rack in a roasting pan. Pour water into the bottom of the pan. Cover pan securely with aluminum foil so that steam will not escape.
- Roast in the preheated oven for 30 minutes. Remove foil. Reduce heat to 320 degrees F (160 degrees C).
- Continue baking, basting with drippings every 30 minutes, until skin is crisp, about 3 1/2 hours. An instant-read thermometer inserted into the center should read 176 degrees F (80 degrees C).
- Place pork leg on a serving platter. Slice into bite-sized portions.

LECHON SA HURNO
Lechon sa Hurno roasted low and slow in the oven turns out super crunchy yet juicy with no boiling, cooling or deep-frying involved. The ultimate treat for pork lovers in your life!

Steps:
- With a knife, pierce the skin a few times. Pour vinegar over and massage on the meat.
- Rub garlic powder, salt, and pepper all over the meat.
- Refrigerate overnight, uncovered and skin side up, to chill.
- With paper towels, pat down surfaces the pork belly to completely dry. Arrange on a roasting pan fitted with a rack.
- Bake in a preheated 180 F oven for about 3 hours.
- Increase temperature to 320 F and continue to cook for about 1 to 1 1/2 hours or until meat is cooked through and browns.
- Increase temperature to 430 F and continue to cook for about 30 to 40 minutes or until the skin is very crisp.
- Remove from oven and allow to rest for about 5 to 10 minutes before slicing.

- Lay the pork belly on a flat surface in a way that the side with the skin is facing down. Rub the salt and pepper all over the top of the pork belly (meat part). Let it stand for 15 minutes.
- Arrange the lemongrass, scallions, and onion slices on one one of the belly. Roll the side where you had the lemongrass all the way to the opposite side until a spiral shape is formed. Secure the rolled pork belly by tying it with a kitchen twine. Rub the oil all over the skin.
- Remove the belly from the oven and brush with fresh milk. Put it back into the oven and continue to roast for 30 minutes or until the skin is brown and crispy.
