STRAWBERRY FREEZER JAM

Steps:
- Place all the ingredients into the bowl of a food processor and pulse until pureed, about 10 to 12 pulses. Make sure there are still small chunks and not completely smooth.
- Spoon the strawberry mixture into 5 (8-ounce) lidded, plastic containers. Set aside at room temperature for 30 minutes. Store in the freezer for up to a year, or in the refrigerator for up to a week.
FREEZER JAM
This is a great way to make jam because it's simple, lower in sugar, and lets the flavor of ripe fruit shine. Our method makes it a cinch to save the last of your favorite summer produce, like nectarines, plums, or berries. The key ingredient is pectin, which gives this jam the right consistency. The recipe is so easy, you might just need a second freezer!

- Thoroughly wash, rinse, and dry seven 8-ounce plastic freezer or glass jars with tight-fitting lids. You can also use zip-top freezer bags.
- In a medium pot, combine fruit and lemon juice. Bring to a boil over medium-high.
- In a bowl, whisk together sugar and pectin; add to fruit, stirring until sugar mixture dissolves and fruit returns to a full rolling boil. Boil 1 minute, then remove from heat.
- Transfer to jars or bags, leaving a 1/2-inch space on top. Seal and let sit at room temperature until jam is set, 2 to 3 hours. To store, freeze, up to 6 months. To thaw jam, transfer to the refrigerator and use within 3 weeks.

- Salad dressing: Keep it in the jar and add some balsamic vinegar, olive oil, herbs, mustard, salt and pepper. Shake vigorously until blended, check flavor balance, and pour over salad greens.
- Asian salad dressing: Use orange marmalade or peach/apricot jam, and blend with vegetable oil, soy sauce, rice vinegar, honey, garlic, and salt. Recipe here.
- Glaze for food: Any kind of jam blended with mustard makes a fabulous glaze for meat, tempeh, and tofu. You can marinate in advance, or if you don't want to miss out on crispiness, brush on during cooking.
- Cookie or cake filling: Put a thin layer of jam between two oatmeal cookies, or make thimble cookies with a dollop of jam in the center, or put a jam filling in a white cake.
- Sandwiches: Make your kids peanut butter and jam sandwiches, or (my personal favorite) cream cheese and jam bagels. Make a fancy grilled cheese with aged cheddar layered with preserves.
- Baked brie: Place a round of brie cheese on puff pastry, slather in jam, and wrap. Bake until golden and melted.
- Flavored yogurt: Stir jam into plain yogurt for a sweet treat. You can do the same with ice cream.
- Make jam syrup: Instead of topping pancakes with maple syrup, thin some jam with boiling water and drizzle that over top, instead.
- Jazz up oatmeal: Stir it into porridge for a tastier, sweeter start to the day. You won't need brown sugar.
- Make a cocktail: Lots of good cocktails can be made using jam as the sweet component. Learn the basic combinations: Strawberry, peach, and rhubarb jams with whiskey, vodka with mixed berry or raspberry, and gin with apricot jam or marmalades.
