This is a 'make a day before' recipe that is out of this world! Very rich and great for parties or get togethers as it makes a lot. Serve on crackers.

½ cup butter
2 pounds crawfish tails, with fat
4 (8 ounce) packages cream cheese, room temperature
1 bunch green onions, chopped
1 cup mayonnaise
½ teaspoon hot pepper sauce (e.g. Tabasco™), or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add half of the green onions, and cook until wilted. Add the crawfish tails, reduce heat to medium-low, and simmer for about 10 minutes. Set aside to cool.
  • In a large bowl, stir together the cream cheese and mayonnaise until well blended. I like to use an electric mixer. Season with hot pepper sauce and Worcestershire sauce until the mixture is pink in color. When the crawfish have cooled slightly, stir them and the butter into the dip along with the rest of the green onion. Mix well, cover and refrigerate overnight to properly blend the flavors.

1 and 3/4 cups mayonnaise
3/4 cup ketchup
1 tablespoon hot sauce (or to taste)
1 tablespoon lemon juice
1 teaspoon Cajun seasoning
1 teaspoon Worcestershire sauce

Steps:

  • Add all ingredients to a bowl and whisk until smooth.
  • Cover tightly or pour into a container with a lid. Refrigerate for a few hours before you want to eat it to give flavors time to marry.
  • Refrigerate any leftovers for up to 1 week.

1 egg (beaten)
1 pound chopped cooked crawfish tail meat or shrimp
4 green onions (chopped)
1-1/2 teaspoons butter (melted)
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/3 cup all-purpose flour
Oil for deep-fat frying
3/4 cup mayonnaise
1/2 cup ketchup
1/4 teaspoon prepared horseradish (optional)
1/4 teaspoon hot pepper sauce

Steps:

  • In a large bowl, combine the egg, crawfish, onions, butter, salt and cayenne. Stir in flour until blended.
  • In large skillet, heat oil over medium high heat. Once the surface begins to shimmer, reduce the heat to low.
  • Drop tablespoonfuls of batter, a few at a time, into hot oil. Fry until golden brown on both sides. Drain on paper towels.
  • In a small bowl, combine the mayonnaise, ketchup, horseradish if desired and pepper sauce. Serve with beignets.

1 tablespoon minced garlic
1 large onion, chopped
¼ cup chopped green bell pepper
¼ cup chopped celery
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can whole peeled tomatoes, undrained and chopped
½ (14.5 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
salt and pepper to taste
5 pounds cooked and peeled whole crawfish tails

Steps:

  • Heat the vegetable oil in a large saucepan over medium heat. Stir in the garlic, onion, bell pepper, and celery. Cook and stir until the onion is translucent and the celery is tender, about 10 minutes. Stir in the tomato sauce, chopped tomatoes with their juice, and diced tomatoes; season to taste with salt and pepper. Bring to a boil over medium-high heat; reduce heat and simmer 30 minutes.
  • Stir in the crawfish tails, and simmer until hot, 5 to 10 minutes.

1 large egg, beaten
1 pound chopped cooked crawfish tail meat or shrimp
4 green onions, chopped
1-1/2 teaspoons butter, melted
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/3 cup bread flour
Oil for deep-fat frying
3/4 cup mayonnaise
1/2 cup ketchup
1/4 teaspoon prepared horseradish, optional
1/4 teaspoon hot pepper sauce

Steps:

  • In a large bowl, combine the egg, crawfish, onions, butter, salt and cayenne. Stir in flour until blended., In an electric skillet or deep fryer, heat 1 in. oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown on both sides. 2 ½ lbs crawfish (shell-on, fresh or frozen)
4 ears corn (cut into 3-4 inch pieces)
1 pound small yellow potatoes (halved, you can also use red baby potatoes)
1 onion (peeled and sliced into 6 wedges)
1 pound smoked sausage (andouille or kielbasa, sliced into 1-inch thick pieces)
8 cloves garlic (smashed)
1/2 cup Old Bay seasoning
1 lemon (quartered)
salt and pepper (to taste)
3 tablespoons unsalted butter for serving (melted, or garlic butter seafood sauce, see recipe notes)
2 tablespoons optional chopped parsley

Steps:

  • Fill up a large pot with water over medium-high heat. Add old bay seasoning, garlic, and lemon. Bring it to a boil.
  • Add corn and baby potatoes into the water. Boil for about 10 minutes.
  • Add sausage and onions. Cover with a lid and boil for an additional 5 minutes.
  • Gently stir in crawfish. Boil for 5-6 minutes or until the crawfish turns into bright red color. Season with salt and pepper to taste. (If you crawfish is pre-cooked, you'll only need 3-4 minutes; if yours is frozen, add 2-3 more minutes.)
  • Drain the mixture (you can reserve about 1/2 cup of the broth for serving).
  • Transfer the crawfish boil to a serving plate or on the newspaper.
  • Sprinkle with parsley. Serve with melted butter or homemade seafood boil sauce. Enjoy!

3 tbsp of butter
3 garlic cloves, crushed
1 small onion, chopped
1 cup of bell peppers, chopped (green, red, and yellow)
2 cups of Half and Half
2 tbsp of freshly squeezed lemon juice
1 lb (16 oz.) bag of crawfish tails, thawed
Salt and Pepper to taste

Steps:

  • Heat pan to medium heat and melt butter
  • Add garlic, onion, and bell peppers. Saute until onions are translucent. This should be about 4-5 minutes.
  • Pour the half and half in to the pan. Stir and allow to cook until the cream mixture thickens.
  • Once the half and half thickens, add the lemon juice, crawfish tails, and stir until everything is combined.
  • Cook for an additional 2 minutes and then remove from heat.
  • Serve and enjoy!
