Stir-Fried Rice image

Fried rice in 15 minutes! Cook Minute® Rice with chicken broth, stir-fry vegetables, soy sauce and egg. You'll feel good about serving your family this low- calorie, low-fat dish.

1 tablespoon oil
3 eggs, lightly beaten
1 (14.5 ounce) can chicken broth
1 (16 ounce) package frozen stir-fry vegetables, thawed
2 tablespoons soy sauce
2 cups Minute® White Rice, uncooked

Steps:

  • Heat oil in large skillet on medium heat. Add eggs; cook until set, stirring occasionally. Remove from skillet.
  • Add broth, vegetables and soy sauce to skillet; bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes.
  • Stir in cooked eggs. Serve immediately.

I am not sure who Mrs Harris is - but that is what have called this little gem for 20 years! Quick, Easy, Tasty, great for pot lucks and family dinners.

2 cups long grain rice
3 tablespoons gluten-free soy sauce or 3 tablespoons regular soy sauce
1 (10 ounce) can mushrooms (undrained)
1/4 cup oil
1 (1 1/4 ounce) package onion soup mix
3 1/2 cups water

Steps:

  • Combine all in large covered casserole dish.
  • Bake at 350 for 1 hour - or until rice is tender.

This Nancy Drew recipe is actually very good. Most of the ND recipes I've posted are really hokey and not so tasty, but this rice is easy to prepare and quite good.

1 cup raw rice
5 tablespoons butter, divided
3 1/2 cups chicken broth
3 medium onions, diced
1 red bell pepper, diced

Steps:

  • Melt 2 T butter in large sauce pan, add rice and fry until brown and fragrant.
  • Add 1 cup broth, boil the lower heat.
  • Cover and cook 15 minutes.
  • Add rest of broth and cook until liquid is absorbed.
  • In separate pan, melt remaining 3 T butter and fry onions and pepper until golden.
  • Combine veggies into rice and serve hot.

This came from a dear Japanese friend of mine who was also my daughter's piano teacher when we lived in Japan. A lot of times I will make this recipe with leftover meat. :) Do not let the oyster sauce scare you. :) It can be found in the Asian part of most grocery stores.

Number Of Ingredients 8

2 -3 tablespoons canola oil
3 tablespoons green onions, chopped
2 cups shrimp or 2 cups cooked beef, chopped
4 cups rice, cooked
2 -3 tablespoons light soy sauce (or to taste)
1 -1 1/2 tablespoon oyster sauce (or to taste)
2 -3 eggs
vegetables (cooked peas and or carrots, if desired)

Steps:

  • Heat oil in frying pan.
  • Add rice, green onion, and meat.
  • Cook over medium high heat for 1-2 minutes trying to coat the rice with the oil.
  • Add sauces and mix well.
  • Push rice to sides and scramble eggs in hole made in middle until done.
  • Combine eggs with rice. Add in vegetables, if desired.
  • Season with salt and pepper, if desired.
  • Serve and enjoy!
