CAMPFIRE BAKED POTATOES



Campfire Baked Potatoes image

This brings back memories of summers with my grandfather. Serve them with salt, pepper, and additional butter.

4 medium baking potatoes
¼ cup butter, softened

Steps:

  • Poke each potato several times all over with a fork. Smear each potato with 1 tablespoon of butter, then double wrap in aluminum foil. Bury the potatoes in the hot coals. Allow to cook for 30 to 60 minutes until soft.

NOTE: In the ingredients it says 3 tsp Montreal Steak Spice the computer would accept this but would not accept the real ingredient Penzey's Northwoods Fire Spice mixture. Use Penzeys's! These potatoes are so easy to make but you will need Penzel's Northwoods Fire Spice mix. They are so good. This recipe is dedicated to SusieD for introducing me to Penzel Spices and her generous nature.

4 medium sized baking potatoes, peeled, cut in half lenthwise
2 teaspoons olive oil or 2 teaspoons other vegetable oil
3 teaspoons McCormick's Montreal Brand steak seasoning (or other spice mixture)
aluminum foil, for wrapping the potato

Steps:

  • Rub the oil over the cut potatoes.
  • Sprinkle the spice mixture over all of the potatoe pieces.
  • Wrap in foil, bake in 400F oven for 1 hour.
  • Enjoy.

FIRE-ROASTED POTATOES



Fire-Roasted Potatoes image

Embers of a wood fire make a perfect oven for baking potatoes; the skin will turn crackly brown and the insides will be hot and fluffy. Uncooked potatoes take a full hour to bake, so you can pre-cook the potatoes if you want to speed things up.

Number Of Ingredients 5

4 to 6 large baking potatoes, like russets, scrubbed
Olive oil
Salt
Freshly ground pepper
Plain butter or butter smashed with cilantro

Steps:

  • Pierce the skin of each potato once or twice with the tines of a fork. If desired, pre-cook potatoes by baking them in a preheated 350 degree oven until just soft when pressed, about 1 hour.
  • Prepare a wood fire outdoors and let cook down to embers. Place each potato on a square of foil large enough to wrap it, dull side up. Sprinkle with olive oil, salt, and pepper, to taste. Rub oil and seasonings into potato, then gather foil around potato to cover it tightly. If using uncooked potatoes, place them in embers of the fire 1 hour before serving; turn every 15 minutes with long handled tongs (do not worry if foil starts to blacken). Roast until the tip of a knife slides into the potato easily (remove a potato from the fire and pull back foil to test; return to fire if not cooked through). If using pre-cooked potatoes, place them in the embers for 20 minutes to heat through, turning with tongs once or twice.
  • To serve, remove potatoes from fire with tongs. Unwrap potatoes with hot pads and cut open tops. Squeeze open potatoes to expose flesh and slather with plain butter or cilantro butter.

In the ingredients I say 3 tsp of Hot Spice Blend but it must be Penzel's Northwoods Fire Spice Mixture (the computer would not accept "Northwoods Fire"). This recipe is dedicated to SusieD for introducing me to Penzel Spices and her generous nature.

Even family and friends who aren't fond of wild rice rave about these golden muffins flecked with colorful blueberries and cranberries. They're a terrific take-along treat.

Number Of Ingredients 10

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
1/4 cup butter, melted
1 cup cooked wild rice
1/2 cup fresh or frozen blueberries
1/2 cup fresh or frozen cranberries

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, buttermilk and butter. Stir in dry ingredients just until moistened. Fold in the rice, blueberries and cranberries. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
