1/3 cup packed dark brown sugar
1 T. butter, chilled and cut into small pieces
9 ounces cake flour (about 2 1/4 cups)
3/4 t. baking soda
1/2 t. baking powder
1/4 c. nonfat buttermilk
1 t. vanilla extract
1/2 c. butter, softened
1 1/4 c. granulated sugar
2 large eggs
Baking spray with flour

FROSTING:
1/4 c. butter
2 c. powdered sugar
1/3 c, (3 ounces) 1/3-less-fat cream cheese, softened
1 t. vanilla extract
1/4 c. chopped pecans, toasted

Steps:

  • 1. Preheat oven to 400°. 2. To prepare bars, combine banana, brown sugar, and 1 tablespoon butter in an 8-inch square baking dish. Bake at 400° for 35 minutes, stirring after 17 minutes. Cool slightly. 3. Reduce the oven temperature to 375°. 4. Weigh or lightly spoon cake flour into dry measuring cups; level with a knife. Combine 9 ounces (about 2 1/4 cups) flour, soda, and baking powder in a medium bowl. Combine banana mixture, buttermilk, and 1 teaspoon vanilla in another medium bowl. Place 1/2 cup butter and granulated sugar in a large bowl; beat with a mixer at medium speed until well blended. Add eggs to granulated sugar mixture; mix well. Add flour mixture to sugar mixture alternating with banana mixture, beginning and ending with flour mixture. 5. Pour batter into a 13 x 9-inch baking pan coated with baking spray. 2 medium, ripe bananas
1 large egg
1/2 cup refined coconut oil, warmed and cooled slightly
3/4 cup coconut sugar
1/2 cup creamy unsweetened peanut butter
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1 cup blanched almond flour
1/2 cup oat flour
2 teaspoons baking soda
1/4 cup unsweetened almond milk
1/2 cup semisweet chocolate chips
2 tablespoons creamy unsweetened peanut butter
1 teaspoon refined coconut oil

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners and set aside.
  • For the cupcakes: Place the bananas on a rimmed baking sheet and pierce each banana 3 times with the tip of a knife. Roast, unpeeled, until the skin is completely black and the flesh is soft, about 25 minutes. Allow to cool for 15 minutes.
  • Peel the bananas and place them in a medium bowl. Discard the peels. Mash the bananas with the back of a fork until smooth. Using the fork, stir in the egg, coconut oil, sugar, peanut butter, vanilla and salt. Mix well until smooth and fully incorporated. Add the almond flour, oat flour, baking soda and almond milk. Continue to stir with the fork until the mixture is smooth and all of the ingredients are fully incorporated.
  • Using an ice cream scoop, divide the batter evenly among the 12 muffin cups. Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool in the tin for 15 minutes before removing the cupcakes to a wire cooling rack to cool completely.
  • For the glaze: In a medium bowl combine the chocolate chips, peanut butter and coconut oil. Place over a double boiler and stir until just a few chocolate chips remain. Remove the bowl from the heat and continue to stir until fully melted. Drizzle the chocolate mixture over the cooled cupcakes. Allow to cool for 1 hour before serving.

Browning the butter really adds a depth of flavor, not to mention it smells extra amazing when in the oven. This is my go-to recipe when I have ripe bananas, and has taken me a while to get it right. Enjoy it hot, fresh from the oven.

3 very ripe bananas
¼ cup brown sugar
¼ cup white sugar
1 egg
1 tablespoon vanilla extract

1 cup mashed very ripe bananas (2 medium)
1/3 cup butter or margarine, softened
2 eggs
1 cup Gold Medal™ flour
1 teaspoon baking powder

1/2 cup chopped cashews
1/2 cup butter (do not use margarine)
3 1/4 cups powdered sugar
1 teaspoon vanilla
1 to 3 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix granulated sugar, bananas, 1/3 cup butter and the eggs until blended.
