1 small black chicken, separate the legs from the breast
4 red Asian shallots, finely diced
1 3/4 ounces/ 50 g galangal, peeled and pounded in a mortar and pestle
1 lemongrass stem, white part only, finely chopped
4 lemon leaves, thinly sliced
1 tablespoon toasted sesame seeds
2 teaspoons chile powder
Sea salt and freshly ground black pepper
3 tablespoons fish sauce
3 tablespoons Sa Pa honey (or regular honey)

Steps:

  • Put the Asian shallots, galangal, lemongrass, lemon leaves, sesame seeds, chile powder, 1 teaspoon salt, 1 teaspoon pepper, fish sauce, and honey in a large mixing bowl and mix together well. Add the chicken, rubbing the marinade over and under its skin. Cover and place in the refrigerator to marinate for 2 hours, or overnight for a better result.
  • Heat a barbecue grill or char grill pan to medium-high heat.
  • Add the chicken and cook for 15 minutes for each side. Once cooked, place the chicken on a cutting board, skin-side up, and chop the leg and breast into a total of eight pieces with a heavy cleaver. Serve the chicken on a platter with some jasmine rice.

1 tablespoon kosher salt
1/4 cup pickled chiles* (See Cook's Note)
Lime leaves, thinly sliced
1 whole chicken, spatchcocked (or butterflied)
1 cup rock salt
2 1/4 pounds fresh sugar cane, cut into 1-inch by 4-inch pieces and halved*
Guava leaves*
4 lemongrass stalks, bruised

Steps:

  • In a large mixing bowl, combine the garlic, 5-spice powder, fish sauce, annatto oil, honey, and cooking wine. Mix well, and then coat the chicken pieces and marinate for 2 hours or overnight for a better result.
  • In a large clay pot, add the rock salt and lay the fresh sugar cane, guava leaves, and lemongrass on top. Then place the chicken on top of the sugar cane, cover with a lid and cook on medium heat for 15 to 25 minutes or when the rock salt ceases to pop.

1 large egg
¼ cup lemon juice
2 tablespoons rice vinegar
2 teaspoons white sugar
1 teaspoon Chinese hot prepared mustard
4 skinless, boneless chicken breasts, cut into small chunks, or more to taste
½ cup cornstarch
2 tablespoons canola oil
1 cup chicken broth
2 tablespoons lemon juice
1 tablespoon honey
1 tablespoon cornstarch

Steps:

  • Whisk soy sauce, egg, lemon juice, rice vinegar, sugar, and hot mustard together in a medium bowl. Add chicken, cover, and let marinate in the refrigerator for at least 1 hour.
  • Remove chicken from marinade and toss in a large mixing bowl with 1/2 cup cornstarch. Be sure to coat thoroughly. Discard marinade.
  • Heat oil in a large skillet over medium heat. Pan-fry chicken in batches until browned and no longer pink in the center, about 5 minutes per batch. Transfer to a tray covered with paper towels to absorb excess oil.
  • Whisk chicken broth, lemon juice, honey, and cornstarch together in a medium saucepan. Bring to a boil; reduce heat and stir constantly until sauce becomes translucent and begins to thicken, about 10 minutes. Remove from heat and top cooked chicken with sauce.

1 tablespoon soy sauce
salt, to taste

½ cup flour
2 eggs, beaten
1 cup panko breadcrumbs
2 cups oil
¼ cup chicken stock
½ lemon lemon zest
1 lemon, juiced
4 tablespoons sugar
1 tablespoon water
½ tablespoon corn flour

Steps:

  • Combine all marinade ingredients with the chicken breast and leave for 20 minutes.
  • Coat the chicken breast first in flour, then eggs, and finally panko breadcrumbs.
  • In a medium-sized saucepan heat the oil to 325˚F (170°C),
  • Deep fry the breaded chicken for about 3-4 minutes until the coating is golden brown.
  • In a small frying pan, combine the chicken stock, lemon juice, and sugar. Bring the mixture to a boil.
  • Mix the corn flour with the water, then add the mixture to the frying pan to thicken the sauce.
  • Add the chicken to the frying pan and coat with the lemon sauce.
  • Serve on top of rice. (We garnished ours with green onions and sesame seeds.)

2 tsp honey
1/2 tsp salt
1/2 tsp black pepper
1 tsp sugar, or Splenda
2 cloves garlic, finely minced
1 tsp oil
2 scallions, finely sliced
3 tbsp lemon or lime juice
1 tbsp and 2 tsp fish sauce
1 tbsp oyster sauce
2 tbsp lemon or lime zest, grated
Additional salt and pepper to taste
12 bambook skewers, soaked in water for at least 10 minutes
Sweet and Sour Fish sauce
Garnish:
Bean sprouts, basil sprigs, mint sprigs

Steps:

  • 1. Marinate chicken in the mixture of honey, salt, pepper, sugar, garlic, oil, cornstarch, scallions, lemon or lime juice, fish sauce and oyster sauce. Set aside for 15 minutes. Add grated lemon or lime zest. 2. Thread marinated chicken onto skewers, leaving two inches free at each end and place on a baking sheet. Heat oven to 375 degrees and bake about 20minutes until chicken is medium-rare. Turn oven to broil and broil chicken until brown. Do not overcook. 3.
