For the vanilla lemon cupcakes
1 cup butter, at room temperature
2 cups sugar
3 eggs
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sour cream
For the vodka lemon frosting
3 tablespoons butter, at room temperature
2 1/4 cups confectioners' sugar
2 tablespoons lemon juice
3/4 teaspoon vanilla extract
1/4 teaspoon grated lemon peel
1 tablespoon vodka

Steps:

  • Preheat oven to 350F. Line a standard sized muffin pan with liners. In the mixing bowl of your stand mixer, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel and vanilla; mix well. Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick). Fill cupcake liners 3/4 full and bake for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove to wire racks to cool completely. To make the frosting, cream butter and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel and vodka; beat until smooth. Frost cupcakes and garnish.

1 long strip of lemon zest
1 (1.5 fluid ounce) jigger citron vodka
½ ounce lime juice
1 ounce sweet and sour mix
1 cup crushed ice

Steps:

  • Moisten the edges of a martini glass with a little lime juice, and then dip moistened edges into sugar. Place lemon zest strip in glass.
  • Combine vodka, lime juice, sweet and sour mix, and ice in a shaker. Shake vigorously, and strain into a martini glass.

Grated peel of 1 medium lemon (2 to 3 teaspoons)
1/4 cup citrus-flavored or plain vodka
2 tablespoons fresh lemon juice
1 1/2 tablespoons orange-flavored liqueur
Ice
Edible flower
1 cup water
1 cup sugar

Steps:

  • Make Simple Syrup (below).
  • While syrup is cooling, in small bowl, stir together sugar and lemon peel. Moisten rim of martini glass with lemon wedge. Dip rim in sugar mixture. Chill glass in freezer until ready to use.
  • In a cocktail shaker, add vodka, lemon juice, liqueur, 1 1/2 tablespoons Simple Syrup and a handful of ice; shake until well mixed.
  • Pour through a strainer into prepared glass; garnish with edible flower.
  • Simple Syrup: In small saucepan, heat water and sugar over medium heat, stirring frequently, until mixture simmers and sugar dissolves, about 3 minutes. Remove from heat; cool.
