2 tablespoons butter
3 skinless, boneless chicken breast halves
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
2 tablespoons garlic powder
1 lemon, juiced

Steps:

  • Melt butter in a skillet over medium-high heat.
  • Season chicken with salt and pepper; place in the melted butter. Cook chicken, flipping frequently, until browned, about 5 minutes. Sprinkle 1 tablespoon garlic powder over chicken; flip and sprinkle 1 tablespoon garlic powder on second side. Cook each side for 2 minutes.
  • Pour lemon juice over each side of chicken and cook until no longer pink in the center, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Healthy Garlic Lemon Chicken Bites image

These healthy garlic lemon chicken bites are the easiest weeknight meal you'll ever make! Tender chunks of chicken breast are tossed in a flavorful mixture of flour, Italian seasoning, salt, garlic powder, and lemon zest before being pan seared. The finishing touch is a squeeze of lemon, fresh garlic and light butter. After simmering for just a couple of minutes, these chicken bites are ready for serving alongside your favorite side dishes, like over creamy mashed potatoes and with a vegetable. Add this easy recipe to your rotation, made with lots of pantry staples and family-friendly, too.

Number Of Ingredients 8

2 lbs chicken breast (chopped into bite-sized chunks)
1/4 cup all-purpose flour
1 tbsp garlic powder
2 tsp Italian seasoning
1 tsp kosher salt
1 lemon (zested and juiced)
1/4 cup light butter (used: I Can't Believe It's Not Butter (Light))
3 cloves garlic (minced)

Steps:

  • Cut the chicken breast into bite-sized chunks.
  • Zest the lemon.
  • Add the flour, garlic powder, Italian seasoning, kosher salt, and lemon zest to a bowl.
  • Stir to combine the ingredients.
  • Toss the chicken chunks in the flour mixture to coat the chicken evenly.
  • Preheat the skillet over medium high heat.
  • Add olive oil spray to the pan.
  • Working in 2 batches, add half of the chicken to the skillet and cook for a few minutes per side.
  • Cook the chicken until the outside is golden brown, and the inside is cooked through (temperature should be 165F internally). Add more olive oil spray on top of the chicken, and again as needed.
  • Total cook time for the chicken should be about 5-7 minutes, depending on the thickness of the chicken pieces.
  • Remove the first batch of cooked chicken from the skillet, and repeat the cooking process with the remaining chicken.
  • Mince the garlic, and juice the lemon.
  • Remove the second batch of cooked chicken from the skillet.
  • Wipe the skillet clean with a wet towel if there are burnt bits in the pan.
  • Lower the heat under the skillet to medium low.
  • Add the cooked chicken chunks back to the pan, and add the minced garlic, juice of the lemon, and the light butter.
  • Toss the chicken with the garlic, lemon and butter in the skillet.
  • Cook the sauce and the chicken for another couple of minutes or until the flavors combine.
  • Serve immediately.

Easy, zesty Lemon Garlic Chicken Bites make for a healthy high-protein appetizer, snack, or main entrée!

1 ½ lbs boneless skinless chicken breasts
4 Tbsp avocado oil
Zest of 1 lemon
4 Tbsp fresh lemon juice
5 cloves garlic, minced (2 Tbsp)
1 tsp onion powder
½ tsp ground paprika
1 tsp sea salt
2 Tbsp ghee or butter for cooking.

Steps:

  • Chop the chicken into bite-sized pieces and place it in a zip lock bag. Add the remaining ingredients except for the ghee/butter (avocado oil, lemon zest, lemon juice, garlic, onion powder, paprika, and sea salt). Seal the bag and move everything around until the chicken is well-coated in the marinade. Refrigerate for at least 15 minutes, up to 24 hours.
  • When you're ready to cook, add two tablespoons of ghee or butter to a large skillet and heat over high heat.
  • Once the skillet is very hot, add the chicken and spread it into an even layer.
  • Cook for 5 minutes without stirring the chicken. This allows much of the liquid to burn off. After 5 minutes, stir the chicken and continue cooking for another 6 to 8 minutes, stirring every couple of minutes, or until much of the liquid has burned off and the chicken is golden-brown.
  • Note: the chicken will be fully cooked after about 7 or 8 minutes of cooking. You can stop the cooking process at that point, or you can continue cooking to get that nice golden-brown sear.
  • Serve the chicken bites with a dipping sauce as an appetizer or with side dishes to serve as a main entrée.

This creamy Alfredo-type chicken dish has become a favorite of my family. My daughter requests it constantly served over bow tie pasta. You can also serve it with rice.

2 tablespoons all-purpose flour
salt and ground black pepper to taste
1 ½ pounds chicken tenders
2 tablespoons olive oil, divided
1 tablespoon butter
5 cloves garlic, minced, or more to taste
½ cup dry white wine
2 cups chicken stock
½ cup half-and-half
¼ cup grated Parmesan cheese
2 tablespoons lemon juice
2 teaspoons cornstarch
4 teaspoons water

Steps:

  • Season flour with salt and pepper. Dredge chicken tenders in flour mixture until coated.
  • Heat 1 tablespoon olive oil and butter in a large pan over medium-high heat. Add chicken and brown for 2 to 3 minutes per side. Remove from the pan and keep warm.
  • Reduce heat to medium and add remaining 1 tablespoon olive oil. Add garlic and saute until fragrant, about 30 seconds, being careful not to burn it.
  • Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add chicken stock and cook until sauce has reduced, about 10 minutes. Add half-and-half, Parmesan cheese, and lemon juice; let reduce for 10 more minutes.
  • Dissolve cornstarch in water and add to the pan. Add chicken and allow to heat through, about 10 more minutes. Season with salt and pepper and serve.

Steps:

  • Combine butter, lemon juice, lemon zest, brown sugar, and garlic in a bowl. Add chicken and marinate for at least 1 hour.
  • Preheat grill for high heat.
