CRETAN PILAFI - GREEK LEMON RICE

Steps:
- Add the butter to a medium pot, and melt it on medium heat.
- At the same time, heat the chicken broth in a smaller pot on medium heat.
- Add in the rice, and coat it in the butter. Lightly brown the rice, and stir constantly with a wooden spoon to make sure it doesn't burn.
- Once the rice is well coated in the butter, add the lemon juice. Continue to stir.
- Using a ladle, add the chicken broth a ladle at a time to the rice. Stir constantly. Add more broth once the rice has absorbed the broth that's been added.
- Once the rice has absorbed all of the broth, take it off the heat. Let it cool for 10 minutes.

This is another recipe I was given at a Weight Watcher's meeting. It is very tasty and has remained a favorite of ours. Recipe is for 1 person - but can easily be increased to the number you are serving.

Steps:
- Melt the butter in a skillet and saute the garlic in it.
- Add the chicken and all the other ingredients (except the rice,) cover and cook until done, about 5-10 minutes.
- Serve on a 1/2 cup of cooked brown rice.

LEMON CHICKEN AND LEEK RICE PILAF

- Heat the butter over medium heat in a skillet that has a lid. Add the pasta and toast until deep golden and nutty. Add the leeks and wilt, 3 to 4 minutes. Season with salt and pepper, and add wine, if using, and cook until it evaporates. Add the rice and the chicken stock and lemon zest. Bring to a boil, and reduce the heat to a simmer. Cover and cook until almost tender, 15 minutes. Add the chicken, lemon juice and parsley. Cover, let stand 5 to 10 minutes, then serve.

- Place the cleaned chicken in a pot on bed of bay leaves, carrots, garlic, lemon, onions, celery and parsley. Fill the pot covering the top of the chicken with about 12 cups water. Sprinkle with salt and throw in a couple of peppercorns. Bring the water to a low boil then gently cook at low rolling simmer for about 1 hour, turning the chicken occasionally. Turn off the heat and allow the chicken to cool completely in its own juices. Remove the chicken and separate the meat from the skin and bones. Strain and reserve all of the cooking liquids.

- Season chicken with salt and pepper. In a skillet, cook chicken and garlic in oil for 4-6 minutes. Add 4 tablespoons broth, wine, lemon juice, basil and oregano. Reduce heat; cover and simmer for 6-8 minutes or until chicken juices run clear., Transfer chicken to a serving platter and keep warm. In a small bowl, combine cornstarch and remaining broth until smooth. Stir into skillet. Bring to a boil; cook and stir for 1 minute or until thickened. Spoon sauce over chicken.

- Heat the oil in a pan over a medium heat.
- Add the garlic cloves and cook for 1 minute.
- Add the lemon juice and cook for a further minute.
- Add the rice to the pan and stir to coat the rice with the liquid mixture, being careful not to burn the rice.
- Add the chicken stock (or crumble in the stock cubes and add boiling water), stir and cover to cook, turning down the heat.
- Check on the rice while cooking to ensure it does not run out of liquid and boil dry.
- After 20 minutes, remove the lid and stir. The rice should still have a little too much liquid at this stage so cook uncovered until the rice is done and the liquid is all absorbed.
- Mix in the chopped fresh parsley and serve hot!

- Melt butter in a skillet over medium-high heat.
- Season chicken with salt and pepper; place in the melted butter. Cook chicken, flipping frequently, until browned, about 5 minutes. Sprinkle 1 tablespoon garlic powder over chicken; flip and sprinkle 1 tablespoon garlic powder on second side. Cook each side for 2 minutes.
- Pour lemon juice over each side of chicken and cook until no longer pink in the center, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Turn a slow cooker to High. Combine chicken broth, lemon juice, garlic, garlic powder, and cayenne in the bottom of the cooker until mixture heats through, about 5 minutes.
