STRAWBERRY-CITRUS SHORTCAKE

Strawberry-Citrus Shortcake image

Bright and refreshing, this is not your ordinary strawberry shortcake. The lemon pound cake is sweeter than a biscuit with just a hint of citrus. Topped with fresh strawberries and tangy, sweetened yogurt, this dessert is truly addictive!

Provided by Sarah Agrella

Categories     Desserts     Fruit Dessert Recipes     Strawberry Dessert Recipes

Time 1h40m

Yield 8

Number Of Ingredients 13

2 cups cake flour
½ teaspoon salt
1 cup unsalted butter
1 ⅓ cups white sugar
1 tablespoon lemon zest
3 tablespoons fresh lemon juice
1 teaspoon vanilla extract
5 eggs
1 quart fresh strawberries, cleaned, hulled and sliced
⅓ cup white sugar
1 ½ cups yogurt
½ cup heavy cream
2 tablespoons white sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease and flour a 9x5 inch loaf pan.

PINEAPPLE-CITRUS SHORTCAKES

Pineapple-Citrus Shortcakes image

Provided by Food Network Kitchen

Time 2h30m

Yield 6 servings

Number Of Ingredients 15

2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
Grated zest of 1 lemon, plus 1 tablespoon lemon juice
Grated zest of 1/2 lime
6 tablespoons cold unsalted butter, cut into small pieces
3/4 cup heavy cream, plus more for brushing
1 large egg
Clear sanding sugar, for sprinkling
1/2 large pineapple, peeled and cut into 1/4-inch-thick chunks
7 tablespoons granulated sugar
1 teaspoon finely grated orange zest
1 cup cold heavy cream
1/4 teaspoon ground allspice

Steps:

  • Make the shortcakes: Line a rimmed baking sheet with parchment paper. Pulse the flour, granulated sugar, baking powder, salt, lemon zest and lime zest in a food processor until combined. Add the butter and pulse until it is in pea-size pieces. Whisk the heavy cream, egg and lemon juice in a small bowl. Pulsing constantly, drizzle the cream mixture into the flour mixture; pulse until the flour is moistened and clumps form. Transfer to a medium bowl and knead 3 or 4 times to bring the dough together.
  • Scoop 6 balls of dough (about 1/2 cup each) onto the prepared baking sheet using a large ice cream scoop or a measuring cup, spacing the dough 2 to 3 inches apart. Refrigerate until firm, about 30 minutes.
  • Preheat the oven to 400 degrees F. Lightly brush each ball of dough with heavy cream and sprinkle with sanding sugar. Bake until golden and a toothpick inserted into the centers comes out clean, 20 to 25 minutes. Let cool 10 minutes on the baking sheet, then transfer to a rack to cool completely.
  • Meanwhile, make the filling: Toss the pineapple with 5 tablespoons granulated sugar, the orange zest and lime zest; cover and refrigerate at least 1 hour or up to 6 hours.
  • Beat the heavy cream with the remaining 2 tablespoons granulated sugar and the allspice in a medium bowl with a mixer on medium-high speed until medium peaks form. Refrigerate until ready to use.
  • Split each shortcake and fill with the pineapple and whipped cream.

WILDWOOD'S STRAWBERRY-CITRUS SHORTCAKE

Wildwood's Strawberry-Citrus Shortcake image

From the cookbook "Wildwood - Cooking from the Source in the Pacific Northwest" by Cory Schreiber. If you wish, other seasonal berries can be substituted for the strawberries: marionberries, blueberries, blackberries, etc. Note: the original recipe specified 3 tablespoons Grand Marnier or Triple Sec and 3 tablespoons fresh orange juice to flavor the strawberries. I omitted the alcohol and added an equivalent amount of fresh orange juice. I also reduced the strawberries by half but feel free of course to add more.

Provided by COOKGIRl

Categories     Dessert

Time 40m

Yield 8 serving(s)

Number Of Ingredients 16

4 cups fresh strawberries, washed, hulled and sliced
1/4-1/3 cup sugar, depending on sweetness of berries
6 tablespoons fresh orange juice
2 1/2 cups unbleached flour
2 1/2 teaspoons baking powder
1/2 cup yellow cornmeal
2/3 cup sugar
1 teaspoon salt
1 1/2 cups heavy cream or 1 1/2 cups whole milk
4 teaspoons grated lemon zest
4 teaspoons grated orange zest
4 tablespoons unsalted butter, melted
sugar, for coating (about 1/3 cup. I used raw sugar for the ESF ( extra sparkle factor)
1 cup cold heavy cream
1 teaspoon sugar (or sub maple syrup, agave nectar, honey)
1/4 teaspoon vanilla extract

Steps:

  • To prepare the strawberries: In a large bowl, combine the strawberries with the sugar and orange juice. Marinate for 30 minutes to 2 hours.
  • Shortcakes: Preheat oven to 350 degrees.
  • In a medium bowl, combine the flour, baking powder, cornmeal, sugar and salt.
  • Stir in the cream, lemon zest and orange zest until just combined.
  • Turn the dough out onto a floured board. Form into a ball and knead 8 to 12 times, or until the ball holds its shape.
  • Cut the dough into 8 equal portions and roll into balls.
  • Roll the dough in the melted butter, then the sugar.
  • Place on a parchment lined baking sheet and bake for 20 to 25 minutes, or until lightly browned and cooked through. Let cool slightly on a wire rack.
  • Whipping cream: Chill a large, deep mixing bowl and the metal beaters (I place the bowl and beaters in the freezer for about 10 minutes). Pour the cream into the bowl and add the sugar (or alternate sweetener) and vanilla.
  • Whip by hand with a whisk or with an electric mixer until soft peaks form. The finished consistency of the whipped cream should just hang from the edge of the whisk. The whipped cream is best if used immediately, but it can be refrigerated for up to 4 hours.
  • To serve: Cut each shortcake in half. Top the bottom halves with fruit and whipped cream. Place the top halves on top and serve.

CITRUS SHORTBREAD COOKIES

Citrus Shortbread Cookies image

This recipe was given to me by my mother-in-law, one of the best cooks I know...and given that we're from south Louisiana, that's saying something. With the chopped up dried cranberries, these are as pretty as they are tasty.

Time 4h35m

Number Of Ingredients 9

2 cups all-purpose flour

½ teaspoon almond extract
1 tablespoon grated orange zest, or more to taste
2 cups sweetened dried cranberries, chopped

  • Make the Shortcake: In the bowl of a food processor, pulse the flour, brown sugar, baking powder, baking soda and salt to combine. Add the butter and pulse until only pea-size pieces remain. (You can also do this by hand, but it will take longer.) Transfer the mixture to a large bowl.
  • In a medium bowl, whisk together the buttermilk, egg and vanilla to combine. Add the wet mixture to the flour mixture and mix to combine. The mixture should be uniform with no dry patches. Use your hands to make sure it's combined, but don't overmix.

Brush the surface with heavy cream, then sprinkle with the turbinado sugar. Bake the shortcake until golden brown, 40 to 45 minutes. Cool for 10 minutes in the pan, then invert onto a cooling rack to cool completely.
